The 10th Anniversary bundle isn't retired. It pops up during major sales. Most likely will come back for the Christmas Sale. Out of all the Legendary bundles, the 10th Anniversary one is a bit of an oddball with it popping in and out of the C-Store. I can't check its current status myself in game as I already have it.

Unfortunately the gameplay for STO is a bit more like Star Trek Legacy, and dear god flying a Borg ship in that game was disorienting.

Its probably too big. While we do have ships like the Universe class and the Borg Juggernaut, they're size tends to be more... horizontal. The Iaidon... is TALL. Both the Aurora and Quasar were revamped to higher quality models rather than their Launch era models. Yes there is a JH Vet Destroyer with a Polaron Lotus. However I don't see them revamping the Vet Destroyers to have specialist seating outside what they already have, which is a Lt. Cmdr Engie/Command.
