Omega and Alpha look similar enough to be two options of the same customizable ship. Can we call this a tie already and get both of them?
Now I'm not as opposed to Omega. But it still probably looks the least interesting out of all of them. The long hanger hanger bay is probably the only thing it has going for it in my eyes. However, the front bay is more functional since whale ships are always broadsiding.
A surprisingly tough choice after the new concept art... but I hope Epsilon gets the win. : )
Edit: DEAD ON 50%! This is going to be a close one.

Therefore, it comes down to whether I like the centerline impulse trails & the "claw-esque" nacelles of Omega or the standard quad-paired nacelles with impulse engines tucked in between them of the Epsilon...
If Alpha (the current contender I'm the biggest fan of) doesn't make it, I can at least live with Epsilon's look...

I actually like them both, they're pretty good looking, but I'm going Epsilon. The in-close nacelles seem to be better for keeping the shield bubble small and condensed, which is something that is well suited for a carrier.
I do have to give props for Omega the Jupiter Update. It's gorgeous. Can't take anything away from that, the 2410 update is very nice.
Seriously though, with the side bays you can broadside covering fire as the fighters come and go.
Well, I'd be okay with it if it IS the first 3-hangar Carrier. But... it's a little unbelievable given that there's no precedent for that yet.

Frigets / escorts are the ONLY way to go. Something with some real teeth like Aquarius escorts or similar.
Quad phaser cannons, phaser turrets, quantum torpedos and a point defence system.
Oh man oh man oh man! This is getting tough! LOVE Epsilon! The shape the nacelles...beautiful. I likes that long hanger on Omega though. Slap that on the Epsilon and you can consider my money taken.
