As to other TV anthologies - keep in mind those were modern day stories that don't have huge overhead from sets, props, and costuming that has to be re-paid in full each time you jump around. Sci-fi production budgeting is a cruel beast on the best of days - deliberately poking that beast is asking to fail.
America Horror Story has (so far) taken place in 2011, 1964, 2013, 1952 and 2015. Fairly certain there has been some extensive costuming and sets/props built just for a specific season.
I'm sure they can find creative ways to re-use set pieces and props from season to season on a Trek anthology.
They did that constantly in the ST TV shows too. There's this giant list of costumes that got re-used for multiple aliens, and set pieces that were seen in several quadrants of the galaxy.
References aside, the visuals are straight from JJ Trek closing titles. Considering the disdain CBS and Paramount have for each other it's surprising.

It certainly looks like the end credits to Star Trek 2009 - but the last time I watched that was long enough back that I wasn't certain if it included those exact celestial bodies or if the new footage was just something being done in that style.

Also, it's been speculated that the first space shot, is of the Klingon Moon Praxis, which blew up at the beginning of Star Trek VI: The Undiscovered Country...
It's also been speculated that the first shot is of Romulus after the Hobus supernova, and that the fiery thing is the Tholian homeworld.
Let's face it, lots of things have been speculated, but there are no data upon which to rely.

He is literally incapable of writing for an environment where the characters can't lookup and see everything that's happening anywhere else in the entire cosmos. Not even on a monitor - they have to be able to see galactic events unfolding in real time with their own eyes peering skyward.

More like because some rumormongers can't comprehend a storyline that isn't a rehash of everything that's gone before. Ahead into a future time? Exploring new spaces? We can't have that!
Captain Isaac Blair commands the USS Decker, a Persistence-class light attack cruiser refitted for exploration with almost half of its weaponry removed to make space for improved sensors, probe racks, and long range provisions. The Decker has been dispatched on a 4 year mission to survey and explore the Talien sector, the outer fringe of the Federation’s westward colonization effort. Blair is a competent, but usually light-hearted captain best known for his patience with junior officers with questionable incidents in their early career - likely because of events now sealed in his own service file. Its a blemish on his record that leads to a tumultuous relationship with several admirals with influence in the Western Expanse. Assignment to the Decker is often seen as a chance at a fresh start for talented but “less disciplined” officers who only scraped by in Starfleet Academy. Transfers to and from the ship are correspondingly more common that on most frontier assignments and Blair’s section chiefs often have to ride herd on an unusually rambunctious bunch of junior officers.
Blair’s first officer is Dennet Irroi, an Andorian tactical officer Blair has know since their Academy days, and possibly the only other person on the ship who knows the contents of Blair’s sealed records. Dennet is a staunch Andorian-warrior traditionalist and a unbending taskmaster on the ship. While Blair is familiar with most of Irroi’s unusual Andorian customs, Dennet still surprises him from time to time. Their sharp differences in personality have been a source of strength to both of them throughout their careers and they excel at “good cop/bad cop” ploys. While Irroi seldom pushes to shoot first, he is adamant about the USS Decker being the ship that shoots last.
The Decker’s mission takes the form of multi-month sorties into the uncharted territories, interspersed with roughly quarterly resupply stops at New Santiago. New Santiago is a prosperous second generation multi-species Federation colony, and a crucial toe-hold in the Talien Sector. The periodic return of the Decker is a welcome sight for the locals, though the dock master sometimes squabbles with her chief engineer. New Santiago is so important to Federation interests that a new Star Base is under construction in orbit above the planet, though so far only the framework and a few interconnected habitation modules, deflector arrays, and power plants are on line - approximately 15% of its final structure.
What had all the earmarks of a quiet and productive cartography and astrometric tour of duty for the USS Decker is turned upside down when an armed Tholian fleet warps into the New Santiago system. In a matter of days the crystalline spider-like aliens have established a colony on the innermost planet of the system - a fiery hellhole uninhabitable to most Federation species. While the Tholians under the command of General Karik Thrit avoid fighting, they rebuff any claims the New Santiago/Federation government makes on the whole of the system. Tensions rise as the Tholian’s ensnare, board, and inspect any traffic moving though the inner system, enforcing their ‘security perimeter’ and creating a sort of ‘system within the system’ in the grip of an often hostile power.
Captain Blair, his crew, and his under-gunned ship are called front and center to protect Federation interests and lives against a superior force that has yet to fire a single shot...

Rumor is in the second season a swarm of ship-sized cosmozoa hatch from one of the system's outer gas giants and threaten to eat everybody. After some will-they-won't-they drama the Tholians actually save the day, fighting for their Federation neighbors just before the swarm reaches New Santiago. The Tholians claim it was just self-interest, stopping the swarm before it moved closer to the star and became even more energetic/dangerous. But Dennet knows better - he sees that General Karik is hardcore about protecting civilians - ANY civilians. Hopefully the show gets picked up for another season. I've also heard the USS Decker gets some of its guns put back on in season two. It sounds cool but I don't want them to lose the whole 'we're explorers' vibe though...
I've heard a rumour the new show follows the actors playing in a new Star Trek show. They face new crews of stage hands and sound operators, new worlds like studio 7 somewhere in Jersey, new villians like incompetent caterers and spiteful agents and new heroes who save the studio in a heartwarming and inspirational crowd funding run.

The novelist behind the Voyager relaunch books has joined the Star Trek 2017 writing team.
This is the interesting part to me...
