I don't get it, I really don't. WHY would you want to just skip all the content and level to 60 in this manner? What exactly do you plan to do once you are 60? Complain that "there is nothing to do" and quit?
I like the fact that you can do that right now. Means all the idiots will get to lvl 60, get bored and leave in a shorter amount of time that it would take them otherwise. It is better for the health of the game and the comunity overall, trust me. I say leave it as it is.
Crafting in this game is all about the end level "rare" recipes that pop up from time to time. It won't likely produce items you can use while leveling because, like you said, if you don't use AD or Zen assets to speed it up, you will most likely have outleveled the items you can craft by the time you are able to craft…
Ouch, why on earth would you do that? Spending AD to unsocket low level enchants is totally not worth it as the enchant drops are plentiful. Just sell the old item with the enchant in it, and spend a new enchant for your new item. The cost to unsocket is multitudes more that what the enchant is worth most of the time.

Imho the $60 pack is worth it so you can have a t3 mount and the starter weapon on all new characters. Also the wolf isn't as useless as the panther, it actually does decent damage and knocks enemies back (and prone if you get it to rank 30).
Problem comes from purple gear being able to be sold in the auction house and not bind on acquire. I agree with being able to roll need for an item only if you can use it, by definition if you can't use it and are rolling it to sell it it is a greed roll.

I think the Knapsack is one of the 2 free bags you get by questing. The other one you get at higher levels and from what people have told me it is smaller, 12 slots, but I haven't got it myself yet.
The helper pack is in the "Founder vendor" that is in Protector's enclave. You actually have to go to him and pick it up, it does not come in the mail like the rest of the founder items.

If the skirmish is not showing up in your queues it means that you are too low level for it. You probably would not be able to complete it even if you did manage to go to it. Go level up some more, it will show up at some point.
You don't "need" to buy the bag of gems to craft. The component you need to craft drops from those arcana/thievery/dungeoneering etc nodes as all crafting components do.
