Its just as I predicted many many years ago. There will be "no T7." They'll just introduce the same ship over and over again on different specializations. And the only possibility of a "T7" would be a "stealth T7." Well, here we are boys. Stealth T7 time.
I'd like to see every mission that was removed restored. I miss that old STO feeling of wacky alien planets, NPC's with no dialogue, and circular ESD. The game is still good but it feels less original now IMO and borrows too much from the modern TV shows. I liked it better when STO's story drove itself.
OP, I too would love to see red Terran material updates for ships. I suspect that this will only happen with future Mirror versions of those ships being released. Not an update to the existing skins.
The Galaxy was the main draw for me but after reading the blog? No thanks. No updated red livery for the actual Galaxy class unlike every other ship. The boff layout, while different isn't really what I wanted either. Oh well. The Lexington trait does look really strong so I might get that separately eventually.

Agreed about the Delta Quadrant though I'll reaffirm that the Gamma quadrant is lacking in terms of things to actually do. Sure, there's a quadrant wide battlezone but it's not that great IMO and I don't many people using it. I'd like to see some patrols or something else to do there.
