Pure Kinetic Build - FaW is EZ mode.
Strong Kinetic Build - I have some energy weapons for procs.
Canon Build - As seen on TV!
I may use a torpedo/mine every once in a while.
At least two from Options 3-7.

I knew using Kinetics would be playing the game on hard mode, but what I didn't realize was how bad the deck is stacked against Kinetics.

Basically I use all beams and 1 torpedo on all my ships except for my wizard who uses 2 torpedoes.

Same, 6 beams and 2 torps on all my cruisers and 5 beams and a single fore torp on sci and carrier ships

I have an Enhanced Bio-Molecular Photon that can crit for over 200k damage, the disruptors do a real nice job clearing a path for it. ^_^
Then of course I have my Intrepid that uses Beam Arrays with an Overload Proc and Gravimetric torpedoes to equal effect.
Funny enough the Nandi works Quite Well for this... 8 weapons slots, (7 torps, 1 Mine) and enough Sci Abilities to have a lot of fun... I had an extra slot so I put Lock Trajectory on it... which pretty much allows to target any ship with any torpedo fore or aft. LOL
I havn't ran it in a while, but here was the equipment at last run.

As much as i like torpedo builds, does that combination not get stuck on the global cooldown for torpedoes?
Why not use 1 harpeng, 2photon/quantum and 1 cluster up front. That may you avoid most of the global cooldown.
In the rear section you can use nukara or tractor mines.
And yes, I run fire at will too. So sue me.

I run torpedoes on anything I fly.
Tactical Team sucked, once upon a time. I got it buffed. Don't think for a minute that Cryptic ignores forum feedback.
II wouldn't call it easy mode, but having flown both, I'd say FAW boats are easier to use than a torp boat.
