Ooh! How about SimCopter, or a spiritual successor? Imagine piloting a helicopter around cities that you built yourself in another game, completing missions such as fighting fires, performing medevacs, and spotting criminals for the police.
Spider-Man N64. Played the heck outta that as a kid; just update the graphics and the gameplay a little (maybe mix in the newer 'fluid' combat system since WoS) and that's it! You don't even need to change the storyline at all.
How about some of the old "Strike" games? You know, "Desert Strike", "Jungle Strike", "Soviet Strike", "Nuclear Strike", etc...

Quake II, everything the same gameplay wise, just modernize the engine and multiplayer capabilities to completely get rid of limitations, I make maps for it so that would be quite a dream come true.

FIFA 1998. Only football game I ever played but it had a nice simplicity the new ones don't have. I don't even like football, but it made a change, shooting balls rather than various people, as most other PS1 games did.
Norway and Yeager dammit... I still want my Typhoon and Jupiter though. JJ Trek The Kelvin Timeline is just Trek and it's fully canon... get over it. But I still prefer TAR.

That also came immediately to my mind when I read the title.
It's gimmick of turning from an RTS into an FPS by assuming control of any unit was pretty cool.
Star Wars: Any of the X-Wing games, Jedi Knight, etc. (I'd have thrown in Battlefront 2 or Empire at War, but those are too new. )
Other: Uhhh... Space Empires 5 also doesn't qualify, which leaves me with... Sid Meier's Alpha Centauri, I guess.
The sad part is, there's a lot of pre-2010 games I'd love to see updated. Though when I hear what EA is doing with Battlefront, I fear any 'update' would consist of removing 70% of the content, replacing the remaining 30%, and just making better graphics.
Infinite possibilities have implications that could not be completely understood if you turned this entire universe into a giant supercomputer.
