It honestly makes sense that Bajorans wouldn't have that much, as during DS9 they had just came out of a long term occupation by foreign power who used the Bajorans as essentially slave labour making it highly likely they had to start from scratch when building their fleets.
After the Dominion war the primary enemy of the Bajorans was reduced to an UFP protectorate with a minimal navy so there wasn't really a reason for Bajorans to build up their military and they had more then enough problems as it was without military build up.
And finally in STO it's pretty much stated that Bajorans are for all intents and purposes an UFP member state (as in even they're not literally a member, they're such a close ally with UFP that they can benefit from most boons of being a UFP member) so again there isn't really a reason to build up the Bajoran fleets as if they're attack Starfleet will protect them (or at least try to).
The UFP has several levels of membership so that makes sense. Just off the top of my head they have mentioned full membership, associate, provisional, and protectorate in the various shows.

It's the only one, because it was also the only one in DS9...excluding the freighter, but that model was reused so many times it's not even funny.

May be the size of a fighter, and maybe somewhere between our modern fighters and a Federation Peregrine in performance, but it was Bajoran. So technically we've seen three Bajoran craft. Would make a decent shuttle to compliment things like the Peregrin or Caitian fighter.

Even worse the Lukari get stumbled across having NO spaceships or orbital weapons AT ALL, and within like 5 days they have 3 classes of starships scootin around the universe...
Here's the thing. We have a design philosophy for the Cardassians. We've seen at least 4 of their ships in canon, which gives us a good idea as to the design styles for them. The Lukari are a Cryptic Original species, so they can easily design ships for them without stepping on any toes. The Bajorans... we've got 1 combat ship, 1 small craft, and a freighter that was also used as a generic freighter.
