The Avenger. In spite of the method in which I got the Fleet T5, I loved every moment of flying that ship. Feel exactly the same about the T6 update as well.
I forgot one in my initial post.. I still LOVE my Fleet Patrol Escort Refit, Tempest Class.
One day, I'll pick up a fancy Pilot Escort, I understand those are the 'new standard' for escorts, but the FPER at T5-U is still an absolute monster. Love the look and handling of the ship, and the Gravity Well/Saturation Bomb combo still helps me end large fights very quickly.
For me, of the many ships I have bought (and been gifted) over time, the ships that I enjoy the most (there are a few), and think were worth every ounce of work are as follows:
In no particular order-
Scimitar: Does not really require much explanation. I had a touch of buyers remorse after buying the bundle,but Ive gotten allot of gametime out of the tactical vessel very effectively.
Kumari bundle: Again, whilst I did have buyers remorse with the bundle I had endless hours of fun with my Kumari.
Pilot escort bundle: Just SO much fun, have to have a coffee before piloting one of those though but they offer a whole new level of...well piloting lol!
Sheshar Dreadnought: Great all round vessel, this is one of the builds where I do use the two pc set with the monbosh console. You can have a whole lot of blasty hull in space with two elite frigates, the seperated section, and two support ships in addition to your main starship.
Astika Heavy Battlecruiser: This thing I think is just an awesome vessel. I have never really gone for an all single beam build before focused heavily around beam skills and it is just great. The console that it comes with is very nasty too and adds allot of crit to your attacks for a time.

OO and the Narcine Carrier: A very able carrier imho, I fly one on my main Klingon toon, Ive gotten many many hours out of this vessel and dont see a new one on the horizon for him just yet.

Since you included time, the Risian ships. I loved the mobility and general quality of them, the flashiness, wiping out Vaadwaur in a pleasure craft, and the puns (Delta Risian ). Those ships held a special place in my heart, and were probably a big part of why I found the Nandi such a disappointment.
Actual purchases, though...
The Connie... 500 Zen and I get auto-leveling phasers to level with Fedside. If there were a KDF equivalent I'd buy it in a heartbeat.
The Vandal... because the Leech is handy and the ship itself is actually pretty darn good at level. I actually prefer the Phalanx at that point, though, which performs wonderfully... unlike the higher-tier Varanus, which is just a crappy downgrade of the DSSV.
The Valdore/Mogai... I bought these two when LoR launched and loved them ever since. They're a graceful design, the Valdore console is handy, and I generally enjoy Destroyers as a suitable intermediary between ecorts and cruisers (yeah, I know all Rom ships are Warbirds... but they handle like Destroyers).
The whole cross-faction battlecruiser pack... I enjoy all three ships, the Starship Trait is solid, all three actually got a set bonus if you're so inclined... it's just a very nice pack.
With each passing day I wonder if I stepped into an alternate reality. The Cubs win the world series. Donald Trump is President. Britain leaves the EU. STO gets a dedicated PvP season. Engineers are "out of control" in STO.
I'm proud to have purchased my Vesta (Multi-Mission Reconnaissance Explorer).
One day Cryptic will be free from their Perfect World overlord. Until that day comes, they will continue to pamper the whales of this game, and ignore everyone that isn't a whale.
The only ship I've purchased is the Faeht. While it is even sexier than I dreamed it would be, so sexy I could sit and state at its sexiness all day, it doesn't perform nearly as well as I imagined it would. But I do enjoy piloting the best looking ship, well the best looking in my opinion at least, so I don't really regret my purchase. I just wish the ship had been optimized for using dual canons by having 1.4 front facing shield strength instead of 0.9 for every single facing.
Mobius Temporal Destroyer - I don't use it much anymore, but i loved every minute of it. It looks badass and is a lot of fun to fly but not as much fun as...
Pilot escorts - the most fun ships in the game imo. So light and maneuverable, more so with the pilot abilities. I don't care that cannons are underpowered, sliding past a target using locked trajectory with cannons blazing is great.
D'kora marauder - got this for my ferengi alt and the lobi set. Again, not fussef about optimal setups.
Finally, Annorax Dread - having flown escorts almost exclusively, its taking some getting used to to fly something so big and heavy, but the sheer range of abilities; science ship stuff, hangar, chroniton lance and all the temporal consoles (Manheim device = 3 annorax!) make it a decent experience. Now finding which shield looks the best, at the moment the delta rep shield is winning, but now i am space-poor
The Lobi 4th Anniversary Ships for my KDF and Romulan. Such sexy-looking ships and I'm more than tempted to buy the three packs once the Boxing Day sale hits come Christmas (yes, I'm gonna wait that long)
The Andromeda. I love the Galaxy class, dealt with the lackluster T5 and felt such awesomeness playing with this sucker.
The Risian Luxury Cruiser. Do you know how hard it was to find something to replace this sucker?! I still wish my Fleet was T5 so I could get the next best thing - the Fleet T5 Assault Cruiser!
