Also the Romulan Dyson ship is pretty nice as well, like others, I think it looks kinda like a baby D'Dex.
KDF = The quad winged Ning'tao Bird-of-Prey no contest!
Fed ... Meh ... Seen them all to often, but If I had to choose STO ones?
The Wells is smexy, as is the D'Kyr, and of course VOYAGER ...
For Cruisers, I like the Oddy. It's the iconic "Federation" shape, but a little 'sleeker'
Don't like any of the escorts.
And finally I'm one of "those" players who actually don't mind the Avenger.

3. Excelsior Retrofit - This ship appeals to the Steampunk in me.
4. Galaxy - I like its curves, part of me doesn't like the oversized saucer, but it is canon.
5. Odyssey - It's the only non-canon design that Cryptic has that I like.
(I'll have to try to Excelsior with the Breen shield - probably would be uber-steampunk!)

And a personal build I made with a mirror assault cruiser with the reman skin, so streamlined, so mirrored, sort of looks like it was made on naboo, (wrong franchise I know).

My favorite ship for Star Trek is the Constitution-Refit. But it doesn't look good as it stands in STO. It's also not a T5 ship (ZING!!!!).
With that, to me it is the B'Rel Bird of Prey. It's canon, it looks good. As a Bird of Prey, much less one with EBC, it is the only, truly, unique gameplay experience in STO. And it looks good to top it off. Whether you use the Type 0 or the new Type 3 textures on it, it's fabulous looking.
1: Elachi S'Golth escort is the most elegant ship to me, I just love triangular ships like the classic black triangle UFO.
2: Tal Shiar adapted destroyer, it truly looks alien and fearsome
3: Scimitar
4: Multi-vector escort, especially the Gamma section, reminds be of a truck somehow, Hey, I like trucks!
It's obvious I like ships with sharp angles and aggressive appearance =^,.,^=
The best looking to me is the Heavy Cruiser line (Cheyenne Class). I love the design with it's four long warp Nacelle's on two swept back wing pylon's. That and I've always liked the work horse ships of the Federation that weren't the flagship.
Second runner up would have to be the Defiant and Miranda Class. The Defiant's unlike any other Federation Ship in form and function. The Miranda is well, a Miranda so enough said.
Otherwise, The Galaxy Class and Constitution/Constitution Refit are iconic. So saying I like them is like a Final Fantasy Fan saying they like Cloud and Sephiroth. It's just a given for most Star Trek Fans.
Klingon Side:
The Vor'cha Class cruiser looks really good in green. Plus, it has this brutal but flowing form.
Luna with the nacelles and mission pod off the Sol variant, for the Luna's wonderful lines and profile but just a bit sleeker. My first character's lvl40 choice and still just elegant.
Nothing like 15 klicks of raw power. Ofcourse I'd of put the energy shields INSIDE the ship, not on the outside so they could be blown away then have an A-wing destroy that lovely bridge.

Multivector all the way. specifically the prometheus/cerebus. prometheus has the best nacelles, but the cerebus has the best front. i thin my signature shows it off decently well, though i really need to update it with the new graphics we got in LoR. ship be sexier now.
It's so hard to pick, I like so many of them. Here's my best shot:
Fed, non canon: Trident Class Deep Space Science Vessel. Its looks remind me of a classic car for some reason.
Fed, canon: Akira class. It's too bad it was relegated to being in the background for the most part.
KDF, non canon: I really the korath temporal destroyer. Sadly, I don't have one.
KDF, cannon: B'rel BoP, of course.
Rom, canon: D'deridex, for sure. One of the reasons was that they looked so sleek and menacing when they first appeared in TNG. They were the first ship that looked like a real threat to the Enterprise.
Rom, non-cannon: Aves class, probably. Looks like a DD but more lean alien. Pretty fun ship to fly, too.
Winner overall: Probably Akira, just because I really, really like that ship. Or the DSSV.

Full Cerberus config with the nacelles pulled in tight against the secondary hull with the swept forward pylons is my personal configuration of choice, otherwise nail meet head.
