The one-handed tricorder thing is probably because they often did that in DSC itself. The DSC props were slightly smaller and much lighter than the metal-framed ones they used in TOS for the "hero" versions of the Tricorders, so the spinoff cast would wave them around one-handed quite often. In fact, they pretty much had to since they were often holding the little detachable sensor in the other hand since in DSC it was not just the medical tricorders that had those.
Two issues regarding DSC characters that I've noticed:
When the character transports to another area of the map, their communicator remains in their hand indefinitely until log out or map change.
While performing a scan, default "V", the character holds the tricorder one-handed instead of using it like the TOS characters with two hands.

But yeah, the communicator in the hands is probably leading to jokes about characters using industrial-strength glue to adhere the communicators to their palms or something.
This was taken back in 2021 September, but it just goes to show that this has been going on for a long time. Even still, this still needs to be documented somewhere.
