I do not think that the number of playable species is limited, so there is no reason that any would need to be removed.
those who played them should be given the enhanced version for their character free of charged and those who later on wish to play them look into the zen store.

Other than Benzite (I think?) and Vorta, we already have every species that was shown in screen-canon to be in the military of any of the playable factions, plus a couple that were not.
(Though it would be cool to get to play a hologram, I also understand why they have not made them available.)
There are still a few that at least appeared in the series and movies and which could be interesting additions.
Kelpiens, Keenser's species, Denobulans, Xindi to name just a few. They may not have been shown to serve in organisations like Starfleet and some might have been represented by just a single individual, but I don't think that's a reason not to include them.
STO takes place after most of the series and movies anyway, so they can always just say that those species officially joined the Federation or became represented in organisations like Starfleet at a later point.
They have already taken that liberty by having some species serving in such organisations indeed (Ferengi, Talaxians as perhaps the most notable examples).

I have seen a Pakled or two, and probably what is probably a Benzite now and then, though they are not often played (about like Tellarite I would guess), but a few people do have them and would probably not appreciate them being removed from the playable races. And removing them would serve no purpose whatsoever anyway, if the playable character lists are limited at all (which is unlikely) it is likely to be at least 64 races per faction because of the way binary numbers work and the data structures and none of the factions have anywhere near that number currently.
The thing is, the game is set up so the bulk of the rarer alien types can be done using the "alien" tab which takes care of making them so they don't need dozens of pre-built races per faction (though they could always use more parts for the alien generator). The only real problem that they have right now is that the Dominion faction is missing that crucial "alien" tab in the character generator.
There's no reason to remove existing species, even if they're unpopular. And as mentioned, alien covers a lot of potential species...for the most part. About the only one that it really can't do properly is Photonic--something i'd love to see as a playable "species" someday.
the Alien species is nice but they should have so zen store features to help costumized your character better.
like unlocking features dealing with caitian and Gorn races, there so much they can offer to enchanced the Alien species.

There might be players in the future or even in the present, who might want to play those species or they might even be revamped. Just add new species like the Suliban to the Romulan Republic, Fed-Orions to the Federation, Ferengi to Klingon Defense Force, and Denobulans to the Federation. At some point, the DSC faction will get Andorians and maybe in the future Tellarites and Kelpiens.

Expanding the current "Jem'Hadar" faction into an actual Dominion faction were you can play the way they are shown in DS9 by adding Vorta (the only Dominion race who can captain Dominion military ships in the show) and hopefully "alien" as well so some of the other Gamma quadrant races can be played (like Dosi, Wadi, Yaderan, etc.) would be nice too.

I have to disagree, there wouldn't be much of a demand for unpopular species, however I would like the Chalchaj'qmey to be made playable, they're a canon race created by Klingon and Romulan interspecies relations, currently Alien Gen lack klingon hair styles and Ba'el ridges to properly make one, also need to add klingon feet ridges to alien gen as well.
having the children of heaven would be a awesome idea, through it pretty easy to make in the alien species.

Heralds: I suppose the argument could be made the same way it was made for Jem'Hadar, but I dunno. As servants of the Iconians, it's a bit sketchy at best to have them suddenly want to fly around with the Federation or KDF.
Well, this could be used as a way to have the Iconians begin to atone for what they did as it was a major criticism of the end of the war, because the Iconians faced no consequences for their actions that supposedly killed billions.
The only consequences they got were M'Tara getting killed (which only pissed them off more) and T'Ket getting outplayed by a bunch of Ferengi (which only pissed her off more, but this was still damn cool, and humiliating for her).
So having them decide to interact again with the quadrants' main powers, much sooner than they originally planned to, could be a way to alleviate the criticism a bit, by showing they are indeed trying to atone, starting with giving them new recruits to train and educate so they can assist, like the original Heralds was designed to.
And this would also bring in mind that the reason they got bombed was because they supposedly barely shared their knowledge to the "lesser species", so they'd be trying to avoid making the same mistake again.
And that could hint (at least in the game's timeline) where Starfleet got the idea and tech for detached nacelles.
it would be a nice unlockable species or faction with the Iconians rebuilding their lost worlds i can see it being like the Romulan and Jem'Hadar where they can choose which side to join.

I'm pretty sure they don't really know how to add in new species too well anymore. The Disco klingons were the first in a really really long time despite a few discussions here and there from the devs about adding in a couple species.
Not really surprising, but considering they did add in Klingorcs as they're sometimes called, I would hope they still have the team member who did that, and they didn't lose them in the Magic the Gathering Purge.
I guess that depends what you consider a "long time"... the Jem'Hadar and Cardassians were added in 2018.
Several of the other ones proposed have either storyline (Herald, Iconian, full Borg, etc.) or modeling reasons not to do them (Undine aren't bipedal; Iconians would have modeling issues as well, etc.)

They've already ruled out any species who are not bipedal/humanoid in shape due to the difficulty of animating them. (Specifically, the reference was made to Undine.)
I would venture that this would include - although they are vaguely humanoid - Devidians and Iconians, as they float rather than walking.
The floating might not be that big of a issue as standard humanoid models can use the same animation. The issue with Undine, Tholians, Tzenkethi and other non-humanoid races is that their underlying animation skeleton is different.
You can make an Iconian do all the same animations as generic humanoids as the control points and bones are more or less in the same points and function there same way, where as with an undine (for example) those are totally different and if you tried to port humanoid animations they would either look funny (and not in a good way either) or not work at all.

Rather than add new species, why not add sub-species of existing races like Grey Orions and Aenar, I would give them same treatment as DSC Klingons, the difference between Grey Orions and Green Orions is that Grey Orions are ugly and have severe disabilities.

It would still be added to STO as a species unto itself. Unless they just modify the color options and add some new body part options... But Orions would still be orions. Whether we choose to make them gray-skinned or disfigured would be up to us...
The Aenar would have to be given their own species, as their traits would be different from Andorians...
They already have Aenar in the game as boffs, it would probably not be hard to make their traits available to the Andorian part of the generator along with the skin color (you can already make one using "alien" except maybe for the main traits).
As for the gray Orions, you can get a kind of very light gray skin tone in the generator right now, though adding the darker gray shades to the current skin choices would be nice.
They don't have to have a separate race slot in the generator because STO would not be able to use the FASA Grays you describe because of IP issues, they would be able to use the TAS gray Orions instead, and those look just like the Green Orions except for the color of their skin and eyes (and yes, the ones in the episode were dumber than a box of rocks, but not more so than typical for villains in the series).
