I was SUPER excited for the borg probes, but ...they're really dumb. How are these supposed to benefit from hangar pet consoles, hangar pet traits, etc. when they literally just run in and kill themselves immediately? Does that even benefit from the +torp dmg from the consoles?

It also doesn't hurt that these are playing to new ship layouts and riffs on FED design themes. There's a lot of rich, indulgent variety here that begs new build directions from what I was using. Well done Cryptic folks, this is a really fun gaggle of ships and it's really great to see this effort put into accessible content that any player can reach for.

The Fed Design theme is a big factor. The other ships that I can layout like the Ahwahnee are mostly alien ships. Having a Fed Versions that is not only better as a Carrier but also a Fed theme is a major plus point.

Agreed! I've been loving these so far. I actually switched one of my characters from a Vesta to the Atlantis and it feels pretty good so far! Same for the Ahwahnee. I switched a character from the Europa to that and it feels like an upgrade/trade on the same ship archetype. And dear lord, that lance on the Chekov feels scary, but I haven't tested it at higher levels yet.
As an aside, dear GOD I wish the gear on the Mandukar was unrestricted. ,_, How good is this as a bonus if it's ship restricted?
Finally, I'm going bitter, because this was the most sought after vessel for me in this bundle... and this was it. It was our chance to have a T6 Cheyenne. We got it! And I'm not going to delude myself with thinking there's going to be another one. The chance to get a T6 Cheyenne has been squandered. I would have loved to get one, but that's not what we got.
I think a legendary Stargazer could still happen even though it isn't quite a Cheyenne.

It could, and it would be a "Cheyenne" per the class definition. The Cheyenne retrofit had assault cruiser seating with star cruiser seating, a combination which is not at all desirable these days. See. the Princeton. It's a massive step up but probably the least desirable ship of the bundle for "suboptimal" seating. Which in this case counts as dual spec, Lt. Cmdr tac, and Lt. Cmdr universal.
Anyone care to guess how a "faithful" T6 Cheyenne would have been received? Even the Patrol escort got a major concept change to make it work with modern builds and its release slot. Granted, they could have made the Princeton the carrier but I don't think that works as well as this combo. Every other available carrier to the FED is unconventional (see. Seneca, Atrox, Jupiter). Throw the odd-ball Princeton into the role and the cycle continues. The Ahwahnee brings a conventional Federation design FOR ONCE to the carrier class.
Deciding what ship goes where isn't just a matter of filling expectations dogmatically (never shall we surprise you, my lord) but balancing the needs of ship releases against eachother. See. the Cyclone shifting to a science leaning intel escort, even though miracle worker or command and an engineering focus may have been "on brand." The need to be a purist was not the only need that required accommodation, hence a different optimum being found.
This is all to say that there's nothing wrong at all with the Ahwahnee (besides the hull glowing in the dark, issue reported). And for those that want another class, well a multi-mission cruiser would be a good fit for a legendary constellation which we can now get thanks to two premium variants of the ship (Constellation, Ahwahnee) now existing.

It still gets to me that the warp core and console on the Mandukar are ship-restricted. Even with all the unrestricting passes being done in the game, and the ship now being part of the anniversary bundle. It feels like it detracts from the ship's value in the bundle that it's one of the only ships in the game now that has restricted gear that doesn't make sense it's restricted (like separation consoles).

You seem to be suggesting you need 3 tactical consoles to make the ship decent which isn't the case. While it can be done the Ahwahnee is not designed around using tactical consoles or ship weapons as primary weapons. There are plenty of decent or even strong setups that use zero tactical consoles. If you really want to use main ship weapons instead of tactical consoles try 7 Isomag consoles. That will provide massively better results then 3 tactical consoles.

Someone made a new Promotions tab under Items then top right Promotions rather then use the Promotions tab we are all used to, that has all the other promotions in.
