EU designs that aren't their own are very unlikely to happen due to the legal headaches using them would be. That isn't to say Cryptic would never use them but for the most part it is not worth it.
Number one is more TOS era ships, this time as standalone T6 instead of this having to buy two ships and have one wear the other as a skin nonsense. With saucers that use the Euler spiral curves instead of the simple flattened bowl shapes of later Treks. Those curves would probably even be a good challenge to the modelers.
Some sleek Orion ships based on the Scout and Interceptor aesthetics, or even something completely original as long as it does not look like that ugly barge or a flying chicken leg bone. The Orions need something besides just carriers.
T6 versions of the Dyson science destroyers and a T6 Obelisk.
A T6 version of the T5 Star Cruiser (the "shovel") and maybe a few more ships of other classes of that aesthetic.
A few more Dominion ships without the toadlock.
For a really far out suggestion, how about a First Federation cluster ship? Not the big sphere of course, but smaller ones set up like Balok's pilot ship with a kitbash option to place the various spheres in a few different configurations. The ship could have a sort of radiation damage tractor/control orientation in its console, trait, and specialty seating.
If the devs could get the license for the Star Trek Armada Ships and those from Dominion War I'd be a happy camper.
More realistic on the list: Norway + T6 Nova
This program, though reasonably normal at times, seems to have a strong affinity to classes belonging to the Cat 2.0 program. Questerius 2.7 will break down on occasion, resulting in garbage and nonsense messages whenever it occurs. Usually a hard reboot or pulling the plug solves the problem when that happens.

Top is a Hideki escort
second would be another Ferasan ship, BC or FDC preferably
Would also love for a carrier class that actually had really strong pets like we thought the support carriers where going to have with their flights.
Comments
- 4/2 Jupiter MW FDC with TMP and Disco Versions
- Vulcan, Lethean and Ferasan 4/2 MW FDC
- New Skins for the FDC Pack: Tellarite FDC, Suliban FDC and Orion FDC
