So I need to fly somewhere first and then look under "current map" in my duty officer assigments if I see a chain-mission there? and then I start doing that?
And after its finished I need to fly there again to get the 2/7 assigment?
Am I right?

You can also buy doff packs from the c-store (there is even going to be a sale on them early next week) which award random doffs of various quality levels (they guarantee a certain minimum number of each rank generally and the rest can be of any quality). Since they are random specialties you may or may not get the exact type you are looking for depending on how the random numbers run when you open the packs.
14 is correct. The links above will show you the exact purps you get for crit on the repeatables, after completing the 7/7 chain.
Note that the Armory Officer from the D'Kel cluster is very useful for doing these repeatables, with the traits you need to max your chance of a crit. Once you have 5 of him/her you are cooking with gas! Also, you still get a DOFF even if you don't crit, it's just something less useful.
If you're having trouble finding these clusters and whatnot, you can click the rightmost tab at the top of your map for an alphabetical list, and then doubleclick on the name to auto-nav there, assuming you are at least in the right quadrant.

According to the list, the crit-reward doffs does not include an explosive expert. But it doesn't show the lower-qualify doffs you get from non-crit completion.
I do know that the instigate defection duty assignment (fed side, don't know about KDF) has a rare explosive expert as one of the possible rewards. But it can award any one of over a dozen possible doffs and has a lengthy cooldown (roughly 96 hours). The doffs are all character bound, too.

...and I just can't find any easy way to get Explosive Experts. That doesn't mean no easy way exists, it just means I have not been able to find one. Especially for a relatively new player, this is a tough row to hoe.

Depends on the chain. The explorations chains are given from that cluster's duty office button that pops up when you are near the cluster. Chain missions will appear (either the starter or follow up) in any of the assignment locations (current map, under a department head, there is both a chef and a bartender chain) and possibly multiple sectors on the map (and possibly different sectors than where the previous mission might be).
There is also a "bug" about where assignment lists "change" on the map which you should research. Look a sweet spot after a major sector line and before the list resets to the generic assignment list, and also realize the list will change the reverse way as well. Several other people explain it better (with maps!!) so look for those.
It can be a fun treasure hunt with cool rewards, but it's a lot more complicated than the designers intended, and at this point, probably not going to change or be "fixed" any decade soon.
PS - One last hint, there's a "chain" that involves a play and 19 holograms. Talk to your Operations Office in Main Engineering (yes, go visit your ship interior). Enjoy!!
