for me, i just cannot make a scimitar work. it's a glass cannon no matter what i do, and all the weapons in the world don't help when you are respawning.

I am a terrible pilot in all ships. I know what to do, but I get completely distracted and just watch instead of taking actions. Bit too much "weeee I'm flying ^.^" and not enough pew pew.
I think my worst are most escorts too. The pilot escorts save me with their maneuvers so I don't die as often, but it spend a lot of time with only my rear weapons firing.
I can handle a scimitar. It's pretty easy for me to absorb fire and deal out what would be considered a passable amount of damage for a scimitar.
I can actually handle pretty much anything but it takes me a big longer than most to get used to whatever setup I'm using when I'm switching from one kind of a ship to another. I get really used to using buffs almost by instinct and it takes a bit for me to get used to a different type of ship.
When you see "TRIBBLE" in my posts, it's because I manually typed "TRIBBLE" and censored myself.
I have some trouble flying the smaller craft due to visibility related to the size. To help me keep track, I use something which leaves a nice bright contrail. My favorites to fly have aways been KDF battlecruisers with a cannon suite. I stay away from spraying shots, and kill one thing at a time. Opposite end of the scale is my Bortasque tactical cruiser; I often slide around like a moose on a frozen lake, especially when I haven't flown it in a while.

to a degree carriers...haven't really mastered the fighter micro management so that they actually add some DPS before blowing up.
If it is "flying", I have troubles with the Kolasi for whatever reasons. If it is more "getting performance out of the ship" the Xyphius qualifies (though I love my Nandi, and they seem to handle similarly, the performance difference is staggering). I also have problems getting the most out of pilot and command ships (but pilots are fun to fly, so I don't mind, command - meh, I think I'll pass in the future. Though the Samsar is a nice ship even if used as a 100% eng cruiser)

I have to agree with what people are saying about escorts and DHC's. Maybe it's user error, maybe it's my computer substitute lagging all the time, or bad internet connection. That said, I can't play the other end of the spectrum, either. I feel like they call it the Galaxy class because it needs that much room to turn. D'deridex is the same for me. It's a shame, because I really wish I could make those ships work. I love those ships outside of this game.
As far as ships I like flying, I like a turn rate of about 10, 4 tac consoles, some durability and a flight deck. My best ship so far is the Flambard, but that may be because of how I've equipped it.
Shuttles because they just look like a dot on the screen we need a 4th or 5th zoom mode, i can't tell what direction the shuttle is pointing at half the time.

For whatever reason, I don't think I fly the T6 Intel Phantom very well. I have flown more maneuverable ships with DHCs; like the Kor BoP with ~44 turn rate & 80 inertia rate; and less maneuverable ships; like the Mat'ha Raptor with ~26 turn rate & 75 inertia; which I fly better than the Phantom with about a 31 turn rate and 75 inertia.
I seem to fly the Vorgon Xyfius Heavy Escort pretty well which has a turn rate of ~26 and 60 inertia. However, instead of using DHCs I am using Tetryon flavored DBBs (the Harasser Probe Console gives +25% Tetryon damage) so that I can install two omni-directional Tetryon beam arrays.

Well my last DHC build was when JHAS was a godship. Truth to be told it didn't need too much maneuvering lol. Nowdays I'm just BFAW-ing away in my sheshar or some other big ship.
To answer the original question I don't like how Cryptic implemented small craft piloting. It's just... bad. On screen flying the runabout or delta flyer was very cool. In this game not so much lol.
Shuttles (because shuttles are universally terrible) and tubs. I prefer fast, quick turning ships so I can keep my DHCs on target. Pilot maneuvers help with this a lot as you can basically get two strafing runs in on the same side.
Intel ships, namely the Faeht. Flies really well, just can't adjust to micromanaging torpedo fire with the enhanced cloak and it's too squishy to use as a conventional Warbird. I'll stick with it though, going to make a new Romulan when the new expansion arrives and I'll tailor it's skills and gear a bit better to suit.
The Defiant. As much as I love that ship I can't make her work. I've blown up so many times that I got ship damages on normal.
I don't have this problem with other escorts, just that one.
For the Faeht you can treat it as a torp-bomber (while it works this doesn't really let it live to its full potential, as the Malem/T'liss is a better torpedo platform IMO because Beachball). However, it is really more like a Klingon Bird of Prey, so if you treat it as such—decloak, bring maximum firepower to bear and obliterate your target, recloak—it's super effective.
If we are talking about how the ship handles, then I would say the Flambard. It's slow and when you turn, the back end slides all over the place like a 68 Mustang in the snow.

Hard to fly...nothing actually. I've got a mix of everything across my captains and fly them regularly.
