“The ships hung in the sky in much the same way that bricks don't.”
― Douglas Adams, The Hitchhiker's Guide to the Galaxy
While flying a Na'khul raider I thought to myself: "This ship flies like a smashed bat glued to a throwing star." I can recall other impressions the maneuvering capabilities of various ships have given me. What other ship and flying experiences have you folks had?

Describes my Fed T6 Carrier quite accurately.

I'd imagine that on my Pilot Escorts everybody is walking around in sealed haz-mat suits or has barf bags tied to their faces. All those barrel rolls and abrupt flips on a ship with multiple decks must mean that vomit fills the corridors and Jefferies tubes!
As much fun as they are to fly, I can't imagine it's practical for a ship like that to maneuver like a fighter. Just looking at the size of them compared to other ships, only the KDF Pilot Raptors are very small (i.e. smaller/equal to the size of a BoP). The Fed ones are bigger than the Defiant class, which just makes it even more comical.
The inertial dampeners and gravity plating must be hella strong on those things to make sure the crew isn't so disoriented and motion-sick that they can't even function. Not to mention that anything not bolted down would fly everywhere. If Picard captained a Pilot Escort all his precious archaeological artifacts would be ruined, LOL.
Maybe missed the point here, but I still chuckle whenever I think of my crew flailing all over the place whenever using those pilot maneuvers, a la BB-8 in Episode VII during the Millennium Falcon chase scene on Jakku.

Paradox Class:
"The ISS Abyss glides like the manta ray he's modeled after. It's still a mystery to me why those don't get eaten more often..."
Eclipse Class (geared for turn rate and durability):
"The USS Prophetess enters the fray like a thrown knife: straight in at flank speed. But once she's in the churn she rolls her hips like a Orion dancer."
Llaihr Class (Tal Shiar Adapted Destroyer)
"Every time we enter slipstream, I'm certain its going to tear a seven light-year long bloody gash in the fabric of subspace."

Thats more to do with poor scaleing I think, Tacitcal Escorts had a crew of 50, Pilot Escorts 45 although they erroniously seem to have about 8+ decks on the ship model.
