It was a fight between Starfleet Officers that weren't entirely convinced of killing each other - but the Excelsior crew was told that there were CHanglings commanding the Defiant. The Defiant crew knew that they were fighting Starfleet officers. Worf didn't even fire back initially! And the Excelsior still lost more crew than the Defiant.
If the Lakota used the quantum torpeodes she had on board, the Defiant would have been turned into space dust, both Sisko and the Admiral made that perfectly clear. The only reason it didn't happen is because, like you said, both sides were witholding since it was another Starfleet vessel in question.

Not sure if the Lakota would have cosidered it healthy eating a few of the defiantes quantum torpedoes. But well, my money wouldn't be on the defiante either....
Not for staying alive and hull healing oneself. Crew is vital, and under the current crew mechanic large crews suffer more from the inability to regen fast enough to get hull repair out of 1% effectiveness. Hardly insignificant when one has no crew in combat.
At full crew or none, healing from crew doesn't make any difference. It really doesn't. You want passive healing, run Living Hull or Hull-Repairing Nanites. Those two make a difference.

If you want to be technical, sure, there is a fractional benefit from crew. Does it make any actual difference? No, but it exists. Is it worth a massive thread complaining about it? No. Crew's regen is so insignificant that for all intents and purposes, it might as well not exist.
