Kirk +crew were pretty smart in avoiding the big guns of the Narada.
Also, everyone (except us two?) seems to forget that Nero and Gang Inc. are a bunch of miners, not a trained military crew.
There was a cracked article where some guy points out that Star Trek focused on the wrong character; Nero + his backstory is infinitely more conflicted and interesting than Kirk and Spock redux/ 'look how awesome this looks with 2000s CGI' that JJ Trek basically is. (and yeah it does look awesome but still)

In a timeline standpoint, the Jellyfish, Narada, and USS Kelvin are Prime Universe designs. From a business standpoint... things get muddy.
Another reason the Narada never detected the Enterprise by Titan was the magnetic distortions from Titan and Saturn's rings effectively masked her warp signature. The Enterprise-E did something similar to avoid detection by the Vulcans in First Contact.
