Within the realms of relative balance, what do you long to fly?
More than anything else, I would love a KDF Kumari type bundle with disruptor ventral cannons. I would even forego a cloak or take a hull hit for it. I know exactly how I would build it too. And since the Kumari is a ENT design, why not use the D5 design from the same series.
Something like that crossed my mind as well.
Maybe take the Fleet Ambasador BO layout and swap the ensign tac for something else, maybe Science.
Alternatively use the D'deridex layout and swap out an ensign there.;)
Beyond that most of my dreamships are already in the game: Fleet Ambassador, Fleet K't'inga, Fleet D'deridex...they're all they way I like them.

I'll go with Temporal Battle Cruiser with Aeon Temporal Shuttle Combat pet and Chroniton Cannons.
Interior that's a cross between what we've seen of the Enterprise-J and the Wells.

I really like my Armitage, but I find the D'Kora fun, too. I also hate having to beg for invites onto Cell Ship Bridges so I can do the DOff missions. So I want an escort carrier with D'Kora-like "Battle Mode" and a Cell Ship Bridge.

Balaur-class Gorn dreadnought. The old version, which looked like it was at least 3km long. As a supercarrier, with a Recluse BOff layout, More hull and crew, lower turnrate, impulse and inertia ratings, +5 power to everything but engines.

Five fore weapons, three aft. Heavy tactical and moderate science seating. Turn rate of seventeen, one hanger bay. A webbing attack console, like on the Tarantula. And a battle cloak, because why not. Handwave it somehow; surely the Tholians have cloaking technology with all the ships they're constantly commandeering. A battle mode. And it comes standard with a Tholian boff.
I must admit that since I got my Vesta class, the more I use it - the more it grows on me. I do find the original design by Mark Rademaker very attractive and that's the one I use without any mixmatching.
And with the second deflector coming soon - I think I'll love my Vesta even more.

For a Federation Cruiser, a revamped Star Cruiser Refit that stands as a true reflection of the Assault Cruiser Refit (that being a Star Cruiser Refit with a Lt. Cmd Science Boff Station). In the past, I have favoured a Galaxy Class (two actually) with the stats of the Assault Cruiser Refit and this proposed Star Cruiser Refit, but then the Galaxy seems less favorable with Cryptic.
For the Klingon Defense Force, I desire a Cruiser that matches (in Boff Stations at least) that of the D'Deridex Refit.
For my latest Romulan Republic character, I'll settle for the Tal Shiar Adapted Battle Cruiser. I'm working on this, but currently the price stands too high.
Thinking outside the box though, I'd settle for a Goa'uld Ha'tak.

You didn't specify STO only ... though I assumed that's what you implied ... but if it doesn't have to be STO only, I'd be stuck between wanting a TARDIS and a Super Star Destroyer and the Millenium Falcon. If it has to be STO only, however, an Odyssey with the manuverability of a Sao Paolo would be perfect for me.

personally i'd like something like the bulwark dreadnought (statwise) with 2 hangerbays capable of fielding frigates and a sci ships shield modifier.

I don't see why saying that is trolling. As far as i'm concerned, it's a perfectly reasonable response to the grindiversary announcements.
Frankly, a nine-console Dyson ship that isn't locked behind another obnoxious grind would be a dream come true.
