However since the salt vampire was killed doesnt mean it was in fact extinct. There has been so much resetting of the time line that the salt vampires could have survived as a race. And there is also genetic modifications that could have been made to make romulan blood taste better to them (Virus's etc)

there's also the possibility that they lived on more than one planet. They're a sentient species, not just monsters, albeit a rather malevolent one.

I just watched this episode! I kind of feel sorry for these aliens, first the last one was so casually killed by Kirk and company. Now the buffalo have been resurrected just to be mass murdered by the "We come in peace" Federation, AGAIN! These guys just don't get any breaks...

Still, it seems that recycling content from TOS isn't the best the team could do. It's cool, sure, but I just can't help but think maybe something more original would be better here.
