For a paladin your shield blocks 50% damage, 75% feated, of your HP. Divine Palisade adds a 10% reduction in damage taken. I tend to agree unstoppable should be 75% of HP.

Half elf extra point is always in an off stat for the class. For paladin they get +1 to Dex. It was explained originally at character creation, tho that may have changed with mod 16.
A lot of your questions would be easier answered in game, and a good guild would be more happy to give advice. You can still be a lone wolf and be in a guild, I spend a great majority of my play time solo but I am in a guild.
I really think the mob density issue will be solved by the fact the maps are so small, with 20 or so people you may find them clustered in certain areas. Well, I replaced my pants and a companion gear piece with second run gains. YMMV, RNGesus is fickle. The drop rates/rewards were improved recently and with MEs WEs and FEs I have accumulated quite a few high IL 2 slot companion gear pieces. Helps with alts and swap arounds as things change.
I would expect that "upon use of your daily power..." would include all daily powers. Paladins do have 2 damaging daily powers, tho I prefer heroism which doesn't do damage. You can activate divine champion and receive auto block, which allows you to attack and block half of all incoming damage as long as your stamina lasts. It will burn your divinity, but is a great defensive tanking option and for me the best use of divinity.
