If you want to parse and be at the top of the DPS output then roll a Rogue. Inflicting damage does not correlate to tanking. When I rolled a GF, I thought I'd be tanking encounters ... protecting the group with at the very least some form of threat induced crowd control, but the only player I see tanking is the Cleric 95%…

The only one not getting hit is the GF because threat is broken. Death order: Cleric, Rogue, Control Wizard, GWF, GF. /sigh

I'd agree with most of your assessment of the Boss encounters. Groups use either of these two strategies. First, DPS the boss down before the mobs that spawn during the DPS burn kill the group. If GFs are not aggro magnets then what is the point for rolling the character? I have a Dwarf GF right now in 3/4 Stalwart armor, EPIC helm/sword/shield and vendor EPIC jewelry.
