I've watched quite a bit of anime. I usually tend to watch ones that a pretty highly acclaimed. I've seen "almost" all of the anime shows I feel are worth seeing. Anyway here is list of my favorite anime. You can probably tell they are almost all darker drama and/or action shows.

    Monster
    Berserk (1st)
    Gurren Lagann (2nd)
    Death Note
    Baccano!
    Cowboy Bebop
    Trigun
    FMA Brotherhood (3rd)
Now and Then, Here and There
    Darker than Black
    Big O
    Shin Chan
    Case Closed

    All Hayao Miyazaki films: (specifically)
    Princess Mononoke
    Howl's Moving Castle
    Castle in the Sky
Nausicaa of the Valley of the Wind

I really don't watch too much anime anymore but I did recently just start a new show called Sword Art Online. It is pretty good and I would recommend watching it. It's about life in an MMO, so kinda like .hack but better. My pick for best anime of 2012. It has some relevance here as well since this is an MMO anime for an MMO community ;)

Don't have a favorite anime series (Ghost in the Shell: SAC came close but 2 seasons too damn short) but watching Bleach ATM.

I'd have to say my two favorite anime things of all time still are Akira and Princess Mononoke. I consider them classic films up there with Lawrence of Arabia, Citizen Kane or The Wizard of Oz for example.

    Umineko No Naku Koro Ni
    Elfen Lied
    Neon Genesis Evangelion
    Mahou Shoujo Madoka★Magica

Also, feel free to take a look at this list (if for some inexplicable reason you want to know exactly what all of the 140+ animes I've watched so far are and how I rate them)

Full Metal's been pretty good from what little I've seen.

Vampire Hunter D and Ninja Scroll have been my two top favorites.
Not far behind, I love Gall Force and Dominion Tank Police... "WE NEED MORE TANKS!"
Akira has remained glorious too.. "You called for me, didn't you? And I heard you."

Mmmm, and the Record of Lodoss Wars! Glorious!

I'm also a fan of the other anime too, like Heavy metal and the Dragons of Autumn Twilight.. oh and the Dark Crystal!

Really surprised no one has mentioned Sword Art Online yet. It's a beautifully animated, well-written anime about an MMO! I don't watch many series, mainly because I believe most anime is pretty bad. However, there are some I really enjoy.

    In no particular order:
    ...Hunter x Hunter (2011 version)
    ...Sword Art Online
...Fullmetal Alchemist: Brotherhood (the 2003 version was good, the 2009 version is way better)
...One Piece (although I prefer the manga over the anime)
...Dragonball (I have no illusions how bad the anime got)
...Big O (wish there were more)
    ...Cowboy Bebop
    ...Ranma 1/2
...Katekyo Hitman Reborn! (read the whole manga. I don't really recommend this one)
...Bleach (I continue to read this, though I absolutely hate it)
...Naruto (same as Bleach, but I don't dislike it as much, this and Bleach need to end, badly)
...Gamaran (cool period manga, losing steam though)
...The Breaker: New Waves (not as good as the first, very slow manhwa)
...Change 123 (fairly short, but fun read)
...AIKI (can be very... graphic, but the art is great and the story is interesting.)
...Wolf Guy (also extremely graphic, very dark)

As far as movies go, anything by Miyazaki is usually great.

If I had to pick a favorite anime/manga, it would easily be One Piece. If I ever had to recommend anime or manga to anyone though, I stick to HxH, SAO, FMA, or One Piece.

Can't believe I forgot to mention Heavy Metal lol, Interstella 5555 by daft punk is good too though it's not an anime in the traditional sense.

Akira pokes my brain with an ice pick every time I watch it. It's a classic, but it's also really disturbing.

Wow, I'm surprised that nobody mentioned Panty & Stocking yet. This community seems to be more sane that I've expected. :U
    Anyway, my favourite anime are:
    Mirai Nikki
    Panty & Stocking
    Puella Magi Madoka Magica
    Tantei Opera Milky Holmes
    Cowboy Bebop
    Video Girl
    Golden Boy

I think that's all. I still think it's too much for a single human being. Or maybe I'm not a human after all?

I will take anime to mean all the animations.

First of all, Ghost in the shell - the movies. I remember each and every line of the movies. Just amazing.

Then ofcourse, Ghost in the shell SAC, SAC2 and SSS. They just come second to the movies(different story).

Next comes Avatar(series) with that monk Ang - it was kind of near realistic depiction of a monk.

After that, Heavy Metal - kinda weird stories but thy were nice.

Then comes, Death Note and Code Geass - recommended by my friend. The latter I am ambiguous, if the you know who is dead, then its good otherwise if he is alive then it is trash.

I guess you see a trend in my choices...

Next comes powerpuff girls - I can never forget Mojo Jojo. They should make a separate series on Mojo Jojo.

After that comes 2 very nice ones - Spice and Wolf; The Colorcloud Palace(translated from Saiunkoku Monogatari). Only watched one season of both and missed a few episodes, but both were amazing.

Lastly, its a messy Valhalla with every animation fighting each other - Superman, Spiderman, Batman in the forefront with Justice League; along with it the short animations from youtube like The Saga of Bjourn, Sintel, and other open movies by these two studios.

At the very bottom of Abyss is the Dungeon and Dragons cartoon which I always try to forget ... it never happened. It never scarred my childhood. No. Its just an illusion it exists.

We would love a series on Moooooojo Jojo, but we would never get post the opening monologue. We would think, "Ah yes, today is the day Moooooojo Jojo is succinct But no, he will enter another soliloquy most likely ended by...cuuurses...and by the time he is done, we will have run out of time for the rest of the show...the show about the genius and not to be confused by the three little girls...who always get in the way of Moooooojo Jojo...but this is not a show about those three little girls, but a show about Moooooojo Jojo.

    ...cuuurses......
Funny thing is, if I sometimes feel the urge to utter profanity, but can't - I usually use this word. Its kind of as effective, if not more.

Wow!, In that huge list I recognized some of my good warriors in Valhalla:
Fate/Stay night and two FF movies (SW and AC) and Helsing.

Rest I have no idea though. But I have heard Black Lagoon is quite nice with highly amoral outlook on life.

EDIT: Oh! One more - Excel Saga! It was kind of like I don't even know where to put it.

After a whole year of bleach fillers or however long it was i don't remember i stopped watching anime and now i just read manga

All time favorite is easily Trigun.

Recently I discovered Steins;Gate, it is about a wannabe mad scientist who constantly rants and raves about enemies he made up stalking him and the evil deeds he is going to get up to, then accidentally makes a time machine. It is hilarious and has a really good storyline to it. I am a sucker for a good time travel story.

I am a big fan of Naruto (both series), loved Bleach when it was not doing filler, Elfen Lied, Full Metal Alchemist (I like the start of the first series better, but Brotherhood quickly blew it away), Death Note, and many others.

I am constantly on the look out for new series to try, I recently got a subscription to Funimation's site and have been trying random shows that sound interesting.

Cowboy Bebop is a classic, Black Lagoon is great and I hear that they've picked up development for it again. Ghost in the Shell was really awesome - both the movies, anyways, I've never gotten into the series. Neon Genesis of course. And Hellsing.

On my "to-do" list is Sword Art and Angel Beats.

You should pick up series. They have completely seperate story, but are more awesome than the movie.

And the music, oh dear Selune! Just listen to Torukia on youtube somewhere. Amazing!

I've actually seen a couple of them and I liked what I saw, but I've always got a lot to do on my plate and TV series in general are pretty time consuming. Nonetheless, maybe one of these days...

Don't spoil it. Watch it in sequence. Otherwise you will really regret it. I did because I missed one episode in first season. Later when I saw that episode, I wished I hadn't.

Is the series still running? If there's one thing I hate, it's getting into a series that's still running then having to wait for the next one to come out :)

Nah! 2 seasons done, and a 2 episode special Solid State Society. They have been out for quite some time. Soundtracks are out too I think 7 records in total though I only have 6(including movies)
