Okay so this is the first MMO game I've ever played, and I'm confused as to a few things.
First off I must say that I love the game. I have made a few purchases, the Stormraider Clydesdale, Acolyte of Kelemvor, a few keys, etc.
So I'm a Level 60 Control Wizard. I have just started the Sharandar and Dread Ring campaigns, and have completed almost all other quest lines that I could find. Between doing these campaigns I also like going through the previous dungeons to help people that need to get the quests done. Now, I understand that at my level I have "epic" versions of each dungeon available; however, most of those are not available to me, due to my gear score being too low.
I have purchased some +5/6 rare and epic gear from the AH, but I'm still only at 7500. So, how do I go about raising the gear score? If I need to buy better equipment, what's the best way to get AD without real money? Note: I do try to do Rhix's quests as much as possible.
I also recently found out about the profession thing in the game, and I'm wondering how that works. What's the point to it? Does it benefit my stats/character in any way? If so, what professions are the best to work on?
How do you get that 7500 with rare and epic gear? Even with full blue items you should be above that value... O_o
First thing i'd recommend you is to fill all the enchantment slots with rank 5/6 enchantments, that should bump you up by 1k or so.
Also, get at least a blue shirt/pants if you didn't already.

Well, the Tymora event will be starting up later today which should be a good source of AD.
But normally, the way to AD gain is dailies (rhix and Lord Nevember), leadership profession, and selling drops from dungeon.
Of course as you continue to do Sharandar and Dread Ring you will get blue and purple gear that will be enough for you to start running Cloak Tower and Cragmire Crypts.
Also despite what people ask for in LFG, you don't need 20k GS or whatever crazy amount they are asking for nowadays to run epics. As long as you meet the min gear score, you are fine to run Cloak Tower and Cragmire.
With that gear score you are eligible for the T1 epic dungeons, so I would do those. That will help to get some more epic gear and some more loot (shards and seals, mainly).
You can also do Gauntylgrym. That is another way to get gear and loot and also AD via Rhix's quests and Lord Neverember's daily quest.

I am also pretty new, only joined a couple of weeks ago. You are certainly high enough GS for a bunch of the T1 dungeons, I am and MY GS is lower than yours. (I'm not doing the dungeons unless enough friends join the game that we create a guild with folks I know). PVP is worth looking into also as equipment can be bought with glory that will also help you reach a decent GS to run T1/T2 dungeons.
If you do none of the other professions, do leadership. when you get it up in levels it gives a decent amount of AD. I'm not doing anything with the others till I've got leadership to lvl13+ (Where you can get the tier 3 professionals and do the better/higher level tasks)
A word of warning about Leadership:
It is the slowest of the professions to advance, and there is at least one Slot that you simply cannot unlock with Leadership and another that requires two of the most expensive Crafters to accomplish. My advice to you would be to look at other professions first, maybe Tailoring and Artificing, to unlock your slots FIRST, then do Leadership.

People have suggested rank 5 or 6 enchantments and that's certainly something you should work for. For the moment, make sure you have at least rank 4s in every non-utility slot then you can work on making rank 5s as they only require green marks to make. Since AD is going to be scarce for you, it's best to spend it wisely. Be sure to check prices of enchantments versus what marks cost before you buy. Most of the time, a rank 6 enchantment costs less than the materials used to make it. A rank 7 is more cost effective to purchase a 6 and upgrade it yourself, but be sure to check first. The key thing right now though is to get an useful enchantment in each slot, which means rank 4s for the most part. Your GS is enough to run any of the T1s, which you should concentrate on to learn how to run Epics. Also, your GS will increase as you run the campaigns and accumulate boons.
Look at build guides in the Wizard forum, not for purposes of respeccing but just to get a clear grasp of what stats need to be at what levels and what spells are best to use. As a wizard, your GS isn't as important as your skill when starting out. Try and focus on controlling mobs first (you'll still be doing damage) and grouping them up so that other party members can help burst them down. Unless you are in a special situation, do not use Repel, Ice Storm or pop Shield in group play. The goal is to group mobs together not to separate them.

Thanks for the responses everyone!
Okay so as far as enchantments go, I have them all at rank 6. Utility slots are XP enhancers (although those are useless now), offense and defense are power and defense, respectively. I also have one item that has an Armor Enhancement slot, but I don't have anything to put there.
As far as professions, I think I will take Jorifice's advice and unlock slots then move back to Leadership; that makes sense if leadership is the slowest.
For Gauntlgrym, I went to that map once and all it has was a few NPCs, I'm not too sure what to do there. I will make sure to do what epic dungeons I can and maybe try some PVP as well. Where do I go for the PVP battles, and is there a schedule?

I would actually move your radiant enchantments to defense slots and azures to offense because you're probably not anywhere near soft-capping critical strike which wizards can use very well. Power is something to look at stacking once you are more geared. Extra hitpoints add to your durability and make your regeneration stat work better.
Don't worry too much about that empty armor enchantment slot just yet. Filling it is a fairly large investment for a newer player without an established in-game income.
Most people use dark enchantments in utility slots because it's the most useful generic modifier available unless you're really trying to farm glory currency in PvP. An interesting alternative will be the special enchantment from Tymora's Gift this weekend, if you get any of those.
Gauntylgrym requires you be in a guild and the event be active to participate.
PvP is available around the clock by pressing K to queue up.
Another $0.02 on professions:
Why not mix Leadership and some crafting at the same time? At least then the uphill climb for Leadership will always be getting some (slow) progress. I go for the tasks that either reward AD or the most profession XP/hr (War Games Training, Patrol Mines, Tactical Training); keep a few of those running as often as possible and eventually that xp bar will move.
Also in terms of professions, the cheapest ones to get into right now are: Alchemy, Artificing and Weaponsmithing (in that order). You can get a green Alchemist worker for a song and a dance right now. Snag 4 blue workers and you can open the 'complete a task with 100% speed bonus' slot (then pass those workers to other characters, rinse & repeat). Leadership workers were also fairly cheap a couple weeks ago (in the 40k's for blues) but their prices have been climbing again; personally, I think the Adventurers are worth investing in as their speed bonus can help ensure that you get at least 2 runs of the 12h jobs each day (ie: they give you more flexibility of scheduling) IF you have the funds to afford a few.
Also, not sure how you only have 7500 GS with rank 6 enchants. My new 60 has no enchants at all and has 8500-9000 GS. Make sure you have blue items and not green; you can buy a full set of blues for less than 1 invocation's worth of AD.
Yeah another newbie here, I hope to get the handle of the game

I'd also like to note that there are actually 2 tiers of blue gear - there's the original rare gear from when the game launched, and there's a selection of blue gear with better stats. I believe they added the better blues with Feywild.
Example:
Old blue ring gave 300 stat points. Better blues give 376. When checking the AH, note the number of stat points and the icon for the item. Go with the better stuff, (still very cheap), and it'll up your GS rating a bit more.
Also - the first few boons from each campaign are pretty easy to get, and they're worth like 250 stat points each.

+5 Lethal Warder's Armor
8 AC
371 power
308 crit
371 armpen
240 def

*EDIT: Corrected armpen value for HR armor. My bad.
