In this topic I want to see what you guys think of as the ultimate STO ship, (any class, any faction.) A little explanation of what you like about it is helpful, but optional. If your favorite isn't an STO ship, let us know where we can see it.
My choice: Hegh'ta (T5 Klingon Bird Of Prey)
I learned about STO while playing World Of Tanks. It had just gone Free To Play, and I was shocked at how I had never heard of the game. Having fond memories of playing the Romulan Empire in a summer-long Star Fleet Battles game, I came to STO to play a Romulan. Only, I couldn't. There were no Romulan Player Characters back then. So I made a Fed Sci guy and leveled him up, and when he hit level 20 I made a Klingon Tac and leveled him up.
I hated playing the Klingon because I had chosen BoP as his ship of choice. Those things are warp-core-breaches with a big 'kill me' sign taped to their backs. Also the fact that I didn't know how to BoP was a factor. But I made it to T5 and got my first look at the Hegh'ta, and I fell in love. It was that ship that made me want to learn to BoP, and slowly I did. I found a mentor, and then another, and next thing you know I had a cannon-build that could melt Borg Diamonds.
The Hegh'ta is a beautiful ship, even in the drab black-and-brown color scheme I picked, and when I finally earned enough salvage to get the Honor Guard shield... wow!
I have a Romulan or three now, and a couple of pretty nice ships in Romulan Green, but the one ship that really does it for me is the Hegh'ta. It is literally the most beautiful ship in STO.

One day they will be a playable version. One day...
Norway and Yeager dammit... I still want my Typhoon and Jupiter though.
JJ Trek The Kelvin Timeline is just Trek and it's fully canon... get over it. But I still prefer TAR.

Honorable Mentions:
I also appreciate the original Jupiter NPC ship as well. The model was clearly outdated, and a lot of details didn't work quite right, but I really loved the "verticality" of the design. Other "modern" designs seem to focus on eliminating the engineering section and making the transition from saucer to rear smoother, but this seemed to go the opposite direction, focusing on the engineering section and merging the saucer into it. Only the Fed Miracle Worker Cruisers come close to reusing that design concept.
From the more modern designs - I was always a fan of the Defiant class, and it feels like the Sao Paulo is the best modernized version of it. I still prefer to make a kitbash between the two, however.
I have to agree with the Old Jupiter. It was an Ugly Dog Beauty. I always thought of them as portable starbases. While they could have used a reskin, I'd have loved to see some relics remain in game, not only as a demonstration of the various periods of Trek history, but as a history of the design aesthetic evolution of STO.
Romulan side... Kinda partial to the Mogai line. Can't really get the D'Derpidex to work outside of story missions right now.
KDF side I liked flying the Mirror Qin Raptor. I've got the Qa'tel Flight Deck Raptor, Fleet Vor'ral, and Sarco.

For both aesthetics and practicality, I prefer the T6 Paladin temporal battlecruiser with the Ranger skin. My DSC toon, McCoin, leveled to Admiral with a leveling Walker, the Tereshkova (a pretty ship in her own right), then jumped up to his T6 Shaun Christopher. (He's currently flying a T6 Vulcan scout, USS S'harien - haven't used her much yet, we'll see how that works out.)
+1 here. Love the Mogai line. I guess I was already about as good at BoPping when I first got the T3, so she was slow by comparison, but the ship is a beast and still nimble enough to mount a cannon build if you want one. I never got the T5+ versions of the Mogai, so I don't know much about them, but for appearance I prefer the stock T3.

While I am seeing a lot of variety I haven't seen a lot of support for certain vessels such as the DSSV or Scyer. I'l have to look into what makes them less than popular. One day.
