I'm asking where the non-Starfleet Federation fleets are in major Federation wars and conflicts, like the Dominion War, so you get to see other Federation member fleets fight alongside each other instead of always this:
Even if you choose to be a Vulcan you are still playing the game as a member of Starfleet.
It would require a lot of extra effort to support separate "Vulcan Federation" and "Andorian Federation" sub-factions, and it would make no sense for them to be undertaking most of the current story missions that are more properly completed by Starfleet. The California Highway Patrol does not go after terrorist groups in foreign countries, nor is it the proper force to defend the United States against the Iconians.
We did see the Vulcan fleet defending Vulcan against Sela.
Those fleets got absorbed into Star Fleet when the Federation was formed. Most of those ships now are simply science and civilian ships.

Do you have a canon source for the size of the Andorian and Vulcan fleets at the time of the Dominion war and in 2409? If for example the Vulcans only maintain a large enough fleet for system defense they would not be able to leave Vulcan unguarded to go off on adventures.
My take on it was always that when the Federation was formed, the member worlds' local planetary fleets (Vulcan, Andorian, Tellarite), remained as local planetary/system defense forces, keeping their own unique designs, but they all contributed resources, personnel, technical know-how and parts, and influenced Starfleet ship design from then on.
That is just an STO promotional picture showing all the various Enterprise iterations, nothing to do with a battle fleet or similar and there would be no reason whatsover for it to have any other kind of ship it.
Mind you, reason doesn't seem to enter all that easily into much of what you post, so *shrug*

Those other fleets ceased to exist as separate entities. Starfleet encompasses all of the Federation.
When you see "TRIBBLE" in my posts, it's because I manually typed "TRIBBLE" and censored myself.
My understanding is that Starfleet is basically the Federation Armed forces. I don't remember seeing anyone acting as typical soldiers or sailors who were not in Starfleet. All-Vulcan ships (which I believe were in TOS and DS9) were never shown to be anything but typical Starfleet vessels.
I would imagine each member of the federation has something akin to a National Guard, Coast Guard, and Police and might occasionally deploy those forces to help the Federation (like the National Guard and Coast Guard sometimes deploy to foreign combat zones). However, I never remember seeing this on screen.

In the episode of TOS with that space amoeba, there was a Starfleet ship, USS Intrepid (also a Constitution class like the Enterprise), which was crewed by Vulcans.
Interesting question; we see some Vulcan transport ships (Unification, in the novelization defense forces for Vulcan are mentioned) it seems everyone's contributing to Starfleet as the primary exploration/defense arm, and serving in it if they want to see the Galaxy
(Given the increasing warp speeds, the sort of ships built for Starfleet's mission profile are probably a lot faster and higher endurance than what a system defense force needs, and probably more glamorous than the likes of the interceptors we see at Mars in Best of Both Worlds)

A very small percentage of members of alien races join star fleet there no way that every alien race doesn't have interstellar travel capabilities. It would be nice to see several types of ships from the various alien races that do have the technology to travel in space.

Non fleet ships would be the equivalent of a yacht, or perhaps a merchant ship. The TNG episode utilized such a vessel (and they discovered during the epsiode 3 had been acquired for the invasion).
Federation Member Worlds do retain their own fleets, but they tend to be shrunk over time, as they find themselves unnecessary, outnumbered, and outclassed by Starfleet ships.
These days, some of the oldest Member World's home fleets are little more than planetary defense forces for key worlds, or in civilian service.

It's why Starfleet ships tend to be so overpowered despite their simple designs and appearance compared to their neighbors. They are the end result of intense cooperative effort between many allied races.
I know not too much people likes JJ Verse, but when Nero attacked Vulcan, Starfleet was called for their defense, no Vulcan ships.. dont get me wrong, i'll love to have some vulcan ship, Surak clas or the Vulcan Temporal Carrier..

Vassals I think would seem to have little say in the politics of the sovereign state that rules over them. I disagree with what the Federation of Planets seems to be.
What we can presume that happened when the Federation was formed was that the founding members all came together and agreed that because Humans were the one species that was able to bring them together, Earth should be the capital of the new political power they were about to create. Earth Starfleet was reformed to become Federation Starfleet and they opened the doors to allowing all Humanioid species to enlist in the academy.
Member worlds would be allowed to be self-autonomous despite being part of the Federation and we can assume that they retained some sort of defense fleet to patrol their planetary systems. Also, as a member world, they had the right to have representation on the Federation Council. Plus, every humanoid member has the right to be elected as the President of the Federation.
In contrast to the Federation, we have powers such as the Klingon & Romulan Star Empires that take territories and essentially the people of the worlds they take are more considered vassals of the Empire than an equal member. A good example of this is the way the Romulans treat the Remans.
If we want to go into actual specifics on why in Star Trek we never see anything but fleets of Starfleet ships filling out the Federation fleet, it has to go back to production values of the series. When TOS started, they only had the budget to make a few models for the show. As a result, you never see any federation vessel in that series aside from the Constitution class Starfleet vessel. By the time the movies and the later series are produced, their budgets have clearly increased, but they still decide to resort to the view that Starfleet vessels are the primary vessels that make up the fleet, due to fact that any Federation member can serve on board these vessels either as a civilian, an enlisted officer or a commissioned officer.

From a canon standpoint--or at least the standpoint of storytelling within the Trek universe--those fleets are out there, going from system to system on their particular individual businesses, but what they're doing just isn't interesting enough to warrant our attention. Hence no series or game titles like Star Trek: Tug Captain, Star Trek: Cargo Run, or Star Trek: Tellarite Truffle Hunt.

Not really? Each Member World has selected representatives in the Federation Council, and they all have equal say. In essence, it's an elected representative democracy.
You seem to be conflating Starfleet itself with the Federation.
Starfleet is a quasi-military/exploratory force under the Federation's control. It is the primary space fleet and defense force for the governmental body that is the Federation.
Starfleet has also existed since before the Federation itself. Because Starfleet was originally a human organization, and because the Federation was founded on Earth, the ships of Starfleet remain primarily of human design in appearance potentially out of some form of tradition.
