Everyone has the same skill tree, so the class of your captain has nothing to do with the skills. I usually chose at least one point in everything, leaving out skills that are of no use for my set-up, any points remaining are spent on universally helpful skills, like boosting systems or increasing weapon skills for weapons I use (most of the times that's energy weapons).
You get a total of 10 ground points and 45 space points, so no, you can't max everything. That would kinda defeat the purpose of choosing. But there are more than enough points to get all the essentials and some special stuff. Don't worry too much about it.

Bridge officers can't use kits, sell those you can't use yourself to a vendor or throw them into your replicator.
Classes and ship types have nothing to do with one another, fly whatever ship you want to fly. You will find that escorts allow you to get through space combat faster for leveling, at least that's nice when you level more characters and repeat content.
