I figured It out today and its all of the tufted adult versions that have unique colors

I have been trying for a week to hatch an egg. it seems to be stalled. what do i do after i give the bird person the egg? all i get is a list of birds that grays out when i choose one.. then when i come back the next day nothing has changed. i have no clue how to restart it.. i really would like to have a bird.. ive got 6 more eggs in my inventory but cannot even get to the second step please help!!!

Do you have the correct number of duty officers? You need 2 science officers to hatch an egg.
Occasionally, I have inadvertently closed the dialog box without actually starting the task... if you've done that you'll only see greyed out options. If that's the case the mission is actually in your personal tab - you can check in there and start it
You can get these randomly from Horga'hns in the Horga'hn hunt that goes on at 15 and 45 minutes after each hour. You can also buy eggs for 150 favors, which averages out to three hunts' worth of rewards.
Don't know if this matters or not but its two hunts worth of rewards, not three, since each hunt rewards you 75 favors just for completing it plus whatever you find along the way.

Just since today's maintenance actually. I started my last bird assignment yesterday - it hasn't even completed yet.
