Finally, bring back Nancy Bell to reprise her role as Ensign Ahni Jetal who come back an admiral from another timeline to save your ship etc almost like when admiral janeway came back and saved the crew of Voyager.

It depends on the ship's name.
I'm expecting a "Delta Flyer upgraded to a Defiant" style ship.
And I can see him calling it something like "Betsy". Probably an old time woman's name but probably something that will sound like whatever the ship's name is.
So, for example:
U.S.S. Elizabeth = Betsy
U.S.S. Earhart = Amy/Amelia
U.S.S. Lindbergh = Charlene (for Charles Lindbergh)
Thing is, ships named for a person or place seem to be background ships to me whereas I kind of expect hero ships to have a mythological name or be named for a personality trait or feeling or state of mind.
For Paris, several names jump out as working for me:
Hera - Always schemed against Zeus and rebellious like Paris. Also, a strong female, which could be a backwards meta-nod to serving under the first female series captain.
Troy/Trojan/Helen/Discord/Eris/Aphrodite/Iliad - Here's where we get on the nose with a mythological reference. The mythological Paris started the Trojan War by running off with Helen of Troy after the incident with the Apple of Discord where he chose Helen, who had Aphrodite's gift.
You might also get some humor for him having been a convict with a name like Alcatraz, Riker (as in Riker's Island), Leavenworth, Folsom, Attica, San Quentin, etc.
You could possibly have the ship named something like the Proton.
I could also see it having a nod to classic cars:
Chevrolet, Ford, Durant, Camaro, Corvette...
You might run into dicey issues with trademark though. More likely on a show than in a game. Although we have "corvette" as a type of ship in the game.
Assuming Paris designed the ship and that the ship was supposed to have his personality and loves incorporated into it...
The U.S.S. Goodheart, a Stingray-class Starfleet Corvette as a beefy Delta Flyer/Defiant hybrid.
- Constance Goodheart from Captain Proton. Which works as both a description of a personality and a woman's name.
- Corvette Sting Ray, turned around. Corvettes are both cars and small warships, hence the pun. Paris had a Corvette Sting Ray in a holoprogram. Also since Sting Rays and sharks are related (and MACO is a play on "mako" or shark), the ship could be a maneuverable little ship with an emphasis on deploying MACO past enemy lines.
Granted, he might just get assigned a ship but there is a history with ship designers like Paris having ships that they tailor built, ala Sisko, or like Geordi commanding a Galaxy, which he knew well. (Janeway had a hand in finetuning Voyager's configuration too, didn't she?)
Gonna assume high speed, turnrate, cannons. Maybe ability to equip cloak (not included). The native gimmick might be some kind of hyper-maneuverability or subspace jump variant.
I get a feeling that the reprise of Tom Paris is going to coincide with the introduction of the Pilot Class of Starships. I still want to get some "Captain Proton" gear rewards though, so I'm going to remain optimistic.

The timing of this is a kinda funny (just to me) as I just finished reading ST Voyager: Full Circle. I'm going to consider this and all those "post-Nemesis and after the end of show" novels cannon since they just pick up where the shows left off and they do have that official CBS logo. It mostly looks like STO also considers them cannon enough too since we have the Vesta and Luna class ships taken directly from the books.
