Each character I make, I make for a specific ship, a particular build, or a specific "theme", and I build my character(s) with that in mind.
The only time I switch ships on a character is to run a T6 long enough to get the ship trait. Sometimes the T6 is the ship for that character, and sometimes it's a T5U... it just depends on the character.
I have had too many problems with switching ships and loadouts on characters with multiple ships (too many loadout and ship-swapping bugs). As a result, I quit doing that and just make a new character or totally redo an existing one for a new ship.

When I design a character it's with a specific ship in mind. I'll usually change characters before I change ships, and will only chance ships in the rare event that another comes along that fits my theme.
I generally keep them in the same ship. Though I do sometimes mix it up for a couple of random things just to do something a bit different, like a connie doing the alhena station.
The only one I regularly swap around is my KDF. He changes from the b'rel to the Kamarrang fairly regularly, but he's a farmer, not an actual player so the ships are not exactly rigged for high spec.

At the moment, I'm using the ship(s) that I need to level up the traits on; I have three characters, with three, two and one ship(s) respetively; my KDF only has the one ship so obviously he's going to stick with that. Might get him the Mogh at some point, but no rush.
The others, they're all built slightly differently, and with different weapons and purpose. Once they're all leveled up, I'll start to fine tweak them, setting them up more specifically for whatever opponent I'm taking the fight against.
Just the one. The reason is obvious.. story, theme and ideas I have for my character. Since I play her as a Captain, she won't be switching posts and ships like socks, and as every Captain, will stick to one ship

1) A Faeht, which is usually a Disruptor build b/c I like the rainbow Disruptor procs. The ship itself for the Intelligence seating and versatility to make things go boom.
2) A Manasa which only runs Antiprotons. I'd run the build on the Faeht, but I can't, since it can't run a warp core for the 2pc set.
I have a love/hate relationship with running a singularity core.
Alts:
Rom: Delta Recruit, so who really cares right now?
Fed: D'Kora in the Reman shield... b/c it's just too sexy not to.
KDF: Chel Grett b/c of its versatility.
I used to bounce around a lot on my main, but now that he has his T6 Fleet Galaxy - he's come home.
As for other toons - I build them for a ship, and where they would fit in my main's fleet. So I like collecting new ships for that and for traits. But once I decide what they fly, they usually don't change.
I have roughly 30 ships. There are days where I literally just sit there trying to decide which one I want to fly today because I have all these outfits yet nothing to wear. I might switch multiple times in one day. I think I have a problem.
My main swaps between a performance ship and a few not-so-performance ships every now and then, just to make things feel less stale. Of course, before Delta Rising, I had a wider selection of ships to switch between every now and then, and it was really fun. Now if I want those options again, I need to obtain about 7-8 upgrade tokens...
Oh, and my favorite ship pre-DR, the old Fleet Patrol Escort, would be destroyed with an upgrade token.
I am a cruiser guy at heart. Even was before cruisers became the cool kids on the block.
I started in a T5 Sovereign back when the game launched, tried many ships in between, but always returned to that ship or upgraded versions at a later time and kept flying the hell out of it.
Only the Command Cruisers got me out of it, as it turned out only for a month or so because then Cryptic released the new Galaxy T6 with proper and beautiful ship costume plus some nice stats,, which is essentially the ship I was always waiting for.
Later today or tomorrow I will upgrade it to fleet status and then I am probably set at least on this toon for practically forever I believe.
My new Delta Recruit is doing it differently, she will stay in the T1 Constitution class just for a different type of gameplay.
I have a science toon who pretty much settled on an Intrepid.
My theme is becoming clear here, I assume.
So when the T6 Defiant arrives I might be convinced to run a new toon, or change a shelf character into an escort character.
Though it would probably be wise to start a delta toon, for that since all my alt toons are pretty much level 50 to begin with.
Anyway.... I will stick to my canon hero ships if possible
I used to fly one ship per character pre-DR. If I wanted to fly another ship, I'd roll up another alt. After DR though I now have all my ships on one character and then swap between them when I want to fly one.
I switch if/when they release one that i prefer the aesthetics of, traits/boff seats/consoles are all secondary except in extreme cases.
When i came back in January i switched from Ody to Guardian because I'd been gone for awhile and had a mountain of free zen built up, so i figured id grab a T6. Just switched to T6 Galaxy because I really don't like the look of the Guardian anymore. If/when they release a T6 Sovereign I'll never switch again, that baby will always be my favorite cruiser. Have a cstore version currently sitting in dry dock with a mirror skin on it in case i ever want to RP as the Terran Empire, lol.
my main had the ops odyssey for years, only now has he changed to the concord class, i even plan to add the destruction of the old ship into a foundry episode to cement the reason for the change.

I switch ships after a while. I will change builds often on a ship. For me not to do so is stagnation and not try different aspects with different builds. I'll come up with a bad build and try to work something out. I'll come up with a good build and will stick with it for a while then try something else out. Because if I stay in one thing for too long, it gets boring very fast.
Now that T6 mastery imparts a ship trait to the captain, I am looking forward to flying my T5U ships again. The Ship traits will make those ships more viable, at least for PvE play, and most of them have more character than the T6 ships. It looks like I'll have to replace all my favorite MU ships with FT5U versions, but I'm looking forward to that as well.
I use all my ships for different reasons, sometimes just to imitate what a "normal" happenstance in the Trek universe might look like. For instance, taking my Risan corvette out for a leisurely excursion, only to be conscripted for a rescue mission, a sudden Borg encounter or some such.
My faves so far (and all of my alts have the same ships):
Dyson science destroyer
Risan corvette & cruiser
Breen carrier (took a while to adapt to this tactical style)
Samsar cruiser
Each alt also has at least 2 faction-specific ships, to maintain RP ...:)

On my main I switch around loads as I bought loads of lockbox ships from the exchange after selling the jhss, though if I'm going for runs with fleeties I'll stick with my presidio or t5u defiant. My kdf though is another matter, t5u fleet mogh and I'll not get anything else as I love it
Tac - Fleet Avenger T5U - Because I am not a fan of other battle cruisers especially the new ones.
Sci - T5U Tac Vesta because it's still one of the better science ships out there.
Eng - T6 Hazari - because I don't mind the look of the ship but I do keep my Mobius ready because the temporal ships are the best looking in game IMHO.
I do fly new/free T6s to get the trait but that it...and I wait until a Double XP Weekend to do it.
Each of my captains has their main starship that they fly 95% of the time. However, they do have a secondary ship (either their old ship they commanded before joining the fleet or a hull the fleet starbase has in drydock for testing), which they use when their regular ship has to be dock for a while.
So yeah, thematic captains.

If I'm doing ISA on my main, I break out the Sarr Theln but otherwise generally I'm in the T5-U Fleet Avenger.
My Delta Recruit flies the T-5U C-Store Avenger 100% of the time

Most of my established characters do have at least one or two ships they are stuck in often, but for variety, I switch out to other ships. Helps resist boredom.
I keep to one ship pretty much, used to have all kinda of ideas and alts and was going to fly all kinds of ships...now I don't have nearly the alts but I still like to keep a character in 1 ship.

Why?
It's my ship. Star Trek captains don'ts switch ships (or fly alien ones) unless they don't have a choice in the matter (baring shuttles of course).
The only time I switch ships on a character is to run a T6 long enough to get the ship trait. Sometimes the T6 is the ship for that character, and sometimes it's a T5U... it just depends on the character.

Breen Plesh Brek Heavy Raider

...probably going to have to pick up more ship slots.
I used to run 10 alts where each would run 1-2 ships. Now I really just play the one toon, so it's all sorts of ship switching on the one.

I occasionally swap to other ships just for a change of pace or to try something different, but for the most part it's one main ship all the way.
