Help! Stuck on Elite.

When the difficulty setting first appeared I decided to play a mission on the 'Elite' level just to check it out. After setting the difficulty to 'Elite' little frigates would kill me in about 3 hits. I finally completed the mission on Elite.
I returned to sector space and reset my difficulty to 'Normal'. I thought all was was fixed.
But now whenever I enter a mission my difficulty is set to 'Elite' automatically and the death penalty keeps stacking up. My ship is permanently damaged and all missions I do are impossible, I am destroyed before I can say "WTF!". I just want to go back to the normal difficulty and stop having to repair my ship.
