We don't even know how things are going to play out. Not only that, there would have to be some equivelent KDF and Romulan ship. Other than when they first released the Odyssey, all event ships have been cross faction.

Yeah they just cast him, they haven't even started production on the second season yet.
That presents a problem by itself, how can Cryptic put a virtually unknown Captain Pike into the game? in order for Cryptic to work from an established character, they need all the detail they can get to create pike and that probably means all of season 2 first and if STO survives into 2022 or something like that, it might be the earliest we could see Anson coming on, especially if Cryptic have a loaded development queue with other stuff.

Its filling in some gaps honestly. We KNOW about Talos IV. We DON'T know what happened between that and when Pike was crippled in terms of the character.
Another gap that can be filled in a bit is the service of the Enterprise-B and the leadup to Narendra III for the Enterprise-C. All we know for sure with the Ent-B is the Nexus encounter. And for the Ent-C, we know she sacrificed herself protecting a Klingon Colony from a Romulan attack.

The handful of Pike-related novels have been pretty decent. It's not required to defecate all over the past when doing prequel work; that's just the habit of lazy and disrespectful writers.

Could we just do what CBS avoided in the last couple decades and just keep moving forward on the timline?
No more time travel, no more alternate dimensions which are stuck in the TOS era. Let's just go to the next friggin day of the narrative instead of retreading yesteryear in a bazillion ways.
Every franchise is going to look at its own roots at some point. Even a show with just one series can still manage flashbacks pr call backs to earlier in that series.
Star Trek has 50 years worth of past and does it's fans a disservice if it does not look back.
The main thing I dislike about ENT, TKT, and DSC is the crowd of whining fanbois who don't understand how the 'off' button works on their TV remote. The series themselves are interesting steps in a journey that we haven't yet seen.
