I'm pretty sure there is room for the Vulcan ship used in the first JJ trek as a shuttle. Its now canon and in the relevant time period. Devs please read and others discuss
What's the point in going to all that effort for something barely anyone will use outside shuttle events? That's sad, I know, but we have to be realistic; people generally just don't care about shuttle content because there's so little of it.

Honestly... I'm surprised they didn't make the Jellyfish as a shuttle for the Kelvin box.
I can't take it anymore! Could everyone just chill out for two seconds before something CRAZY happens again?!

Just doing this as a one off, unless we were going to see it as a ship/shuttle we get from the first contact day event, it would just not make back the resources it would take to make it. Though now if it were part of a pack of Vulcan ships, that woiuld include the shuttle that might be more reasonable. Like say having a cruiser, science ship (just upgrade the one already in game), and a escort with the shuttle an support vessel would be appealing to many more players. I would not mind if the shuttle they used was a mini version fo the ship we see in the first contact movie at the end.
Images below not what I think they should use specifically, but in game they could use them as a muse for designs that would feel quite vulcan.

The D'Kyr comes with a Tal'kyr shuttle, so you get 2 for one. But we could use the Surok class cruiser, and that other ship as well.
