I don't think so... if yes, they would be the 1st generation of federation starships with a bunch of solar panels on the saucer. I personally never heard of such thing.
Or, you know, they're just bigger to allow the crew to see more space.
That's a potential in-universe reason. The most likely meta reason is the artist only had a few hours to make the thing before it was time to make the episode of ENT it's in and didn't have time to properly scale everything.
However, what I have a problem with is the hitbox:

Checked with an Aeon and yeah, you're right. So, it's actually the Vengeance's hitbox that seems to be messed up.

The Ent-J model is a mess. As @saurializard posted the actual reason is that the ship seen in ENT was actually a rushjob pieced together in hours without any way to even create a full exterior - that's why the saucer texture was so distorted and that's why the in-game windows are so messed up, they are literally stretched. HOWEVER I have to give kudos to Thomas Marrone and the rest of the ship team - it is a faithful adaptation of the canon design, even translating the obvious model errors due to rushjob into the actual in-game model. And no, that's not sarcastic, I love how precise the ship team worked here - it's not their fault the model is hideous

I do like the design of the J, generally speaking. The thing is ugly as all hell, not a sexy ship. But the idea that vessels are absolutely huge and there must be some undisclosed rational for it is intriguing, and in the context of the show, it's a masterstroke; a bit of fan-service that helps to give a sliver of insight into the future and situation Daniels is explaining in the scene. And its still a bit of a mystery, ther's still a lot left to the imagination (probably because it was a rush job of a rush job) and that's intresting.

Not necessarily. STO has made Kal Dano's shuttle from the 27th Century as Daniels' shuttle from the 31st Century. Daniels just gave his shuttle to Kal Dano so they could escape and fulfill their destiny. The Aeon and Relativity from the 29th Century don't have the TARDIS effect. So dimensional transcendence (bigger on the inside) technology was developed in the 29th to 31st Century not the 26th Century
more advanced techniques, slimmer and slimmer engine pods.

I bought a Fleet Paladin quite a while ago to cover this design type in my collection. It seems that the future shipwrights didn't like "naked light tubes slung under a needle" design after all, and returned to something better protected.
From a RL standpoint, it strikes me as concept art that wasn't ready for prime time, but hey had no choice but to use.
