For example, the antichroniton-infused tetryon weapons from that one episode, the Krenim chroniton torpedo, the chroniton weapon from the lobi store, etc.

I've long been tempted to make a "classic" rainbow boat using a light blue fed cruiser and naming her the U.S.S. Rainbow Dash
As far as temporal weapons though, no, my TOS character will be using TOS phasers (or TMP if they become available), and my ship will be the U.S.S. Tun Tavern NCC 1775 (that's the place and year that the United States Marine Corps was born).
I've got a "fake rainbow" ship, TOS phasers, Bio-something Phasers, and Regular Phasers.
It does a decent job
One cool "stupid shuttle" trick is to use the TOS shuttle omni Beam array and a regular shuttle omni phaser beam array on the shuttle, put in Fire at will as the only ability on a shuttle that has 2X tact console slots with Phaser relays.
Does fairly good on shuttle weekends

You can do that shuttle trick to even greater effect with the Ancient AP Omnibeam and a crafted AP omnibeam, also with the mission reward Tetryon/crafted tetryon omnibeams and the new mission reward polaron and crafted polaron omnibeam. Even better than with common quality shuttle omnis.
I know, but when it comes to crafting things I am so cheap I make a ferengi's ears wince.
The ancient omni + crafted omni or the AP omni that comes with the wells shuttle is nice set to have on a captains Yacht or a peregine fighter.

A while back, my Nebula used all the different types of phaser beam arrays plus a kinetic cutting beam, and some guy at the end of an ISA yelled at me for having a "useless rainbow failboat". He obviously count tell they were all phasers (except the kbb), he also couldnt tell that my GWIII did more DPS than his whole ship did.

There's a pilot spec power that grants a sonic boom but pretty sure you can only use it on escorts until a cruiser is made with pilot power access.
Hopefully a T6 Sovereign will have Pilot seating.
Ordinarily, T6 upgrades of old ships get a hybrid seat of whatever specialization is newest. If the T6 Sovereign comes out after AoY, then it'll be a temporal hybrid seat. But that's okay, because it could have some sort of rainbow boom effect as your ship travels in time for some ability!

I'm a big fan of the rainbow boat, mostly because I'm pretty indecisive about what I want to shoot with and don't much care for min/maxing (for like 4% per console) and getting locked into one technology line.
"Rainbows" of the same energy type are fine, but if it was me making it there's no way I'd mix energy types. It's just not a good practice.

I'd like to make a phoRainbow build with Phaser, Phased Biomatter, Bio-Molecular Phaser, and Andorian Phaser just to see someone rage. Then I'd link them for the lulz.

There's two "bio-something". The Undine rep weapons and the Xindi lock box weapons. They're different colors two! Undine rep is bright green. The Xindi phasers are teal and make a thump sound when fired.
I have a character who runs mainly 8-weapon ships. Her beam setup is a standard phaser(orange), ancient 360 AP(red), Kinetic cutting beam(pink), phased tetryon(purplish blue), Dominion Polaron(purple), Delta rep Polaron(yellow), Rom plas(blue-green), plas-ruptor(yellow green)
TASTE THE RAINBOW!

It’s a good idea OP and I have already similar plans as “back up” solution if I want to go for the new expansion but without breaking into sweat over it. I have so many epic and UR acc bound beams of different colours around that I threw out just because one mod was imperfect that my AoY toon could already have a nice build without me putting much effort into it.
With +beam consoles we have at spire (not to mention flagship consoles) rainbow builds are not that far behind. The terran and ico beams are also 2 of the best beams to slot. If one ad the kinetic cutter and perhaps the 0 energy consuming romulan beam a sci ship would almost be set up already.
Atm I have only settled on an Andorian science toon. I don’t have to make a performance build out of it because I already have nine of those but would love to do something fresh and different.
We shall see. With all the torpedo pioneer work @darkknightucf made I could also see myself giving torpedoes a second third try.

What about rainbow boats that use beam tac consoles instead of energy consoles? Ive beene tempted to have ships with 6-8 omni
You can't do that, @whicky1978. You can equip one crafted omni, one non-crafted omni, and the KCB. If you want a fully omnidirectional ship, you'll have to go with turrets (and cannon consoles if they're all different energy types, for a Skittles ship).

True. But, keep in mind the Sovereign class Enterprise did actually travel back in time once. So a temporal spec might be in flavor? Though command might also be in flavor. Pilot would be cool too.

Phased Tetryon is actually Cyan. Not purplish blue. Standard Tetryon is straight up blue and Destabilizing Tetryon is white.
