I just bought a peregrine fighter with some leftover points I had. It came equipped with a device of the same name (a non-combat pet I assume), I unequipped it to see if it would equip on my main ship (Obviously it would not. I didn't read the tooltip ehehe) but now it will not re-equip back onto the peregrine fighter ship.

The only reason it is equipped on the ship, is to allow the transferrence to you. the second you take it of, it will never be equipped again.
Once in your inventory, you can however have it follow you in space, provided you fly somthing bigger than a shuttle.
Simply have it in your inventory, press P in space and find the shuttle and drag it to your power bar.

It really is to bad I can't "launch" that 1 pet from my fighter. Would be cool to have a "wingman" in those noncombat moments

Why would you even want to fly a fighter in the first place? Aside from The Vault and perhaps Delta Flyer daily?
I'm sorry, but the way it is now you pay 400CP for yet another useless shuttle variant and even more useless pet. And they will probably be available via in-game means to obtain one day anyway, just like the Delta Flyer.
It's -extremely- fun to fly a fighter, believe me. Not so much when soloing or doing PvP, but when teaming up with a few friends to do missions.
I just love going into dogfights with enemy fighters whilst the rest of my team takes on the bigger ships, and when I'm done I swoop in to deliver a few "coup-de-grace" torpedoes on open flanks of the big vessels where my friends have shot the shields down, a fighter's superior maneuverability making it possible for me to stay on the enemy's weak side...
It's a completely different gameplay experience, and as such this C-Store Offer makes much more sense than, say, some ship costume.
I've got high hopes for those shuttle/fighter missions that seem to be in development. I also still want to participate in some friendly PvP where either everybody flies a shuttle/fighter or several fighters try to take on one or two big ships.
It's also cool for roleplaying, though. My Orion is using the To'Duj as a sleek courier vessel, for example.

Must fully agree here, but not the Penegrime or whatever that thing is called we get on the fed side, god it is ugly compared to the sweet To'Duj we get ont he klingon side
