if you are so sure go try it... you don't need to go all out and fully kit yourself for aps - a single piece of gear will show you if your theory has any merit...doubtful though

the pets/summons are skills. their level remains the same as when they were summoned - until you resummon them when they automatically move to the level of the mystic - and there stats adjust accordingly to the mystic (refined your armor since last summoned? summon now has stronger defence too - cool huh?)

what warpet said basically. sometimes the launcher seems to reset the default server after a patch so you just need to make it choose the server your characters are one.
