is there any chance you have the "assisted targeting" option (or something like that, forgot what's called exactly) turned on in your settings? I activated it myself a few days ago, hoping it would solve my 'Hellfire Ring missing enemies' woes, but instead it began messing up my camera much like how you just described.

fought groups of vampires/initiates/gloomblades with no problem, but assassins seem... a bit off I'd be fine with that if they were by themselves, but the fact that they come in packs with other annoying mobs makes for a less-than-fun, sudden deaths-ridden experience overall
