Do you keep Mulhorondi equipment after you get to 60? Or does it really matter?

Considering that the mulhorand gear grows with your level and is recommended throughout, I would keep it. I have two level 60's with the gear and the only thing to lose its purpose so far is the mulhorand cloak. :)

At level 60, the weapon at least becomes equivalent to a T1 piece. Keep it until you get something with better stats. That's going to be a T2 weapon, either a junk weapon or one from a set, or a T2.5 piece from CN, MC or VT. The offhand will probably be similar, and the cloak can probably be replaced with something with the stat distribution that you need.

Unfortunately, it can't be salvaged either. Get the most bang for the buck and get one right out of the gate.

cool thing about that gear is it's dirt cheap to unslot enchants/change appearance. It seems as though the game considers it a lvl 1 item

Ancient, Fomorian Fabled, or Fallen Dragon weapon and off-hand sets.

Pretty much this. They're fine until you can replace them. No particular reason to keep them beyond that, unless you want to keep them for transmuting.

I have been scavenging, and so far the best set for my class and play-style would be the Avatar of War set. By the assumption T1 is quite a bit less powerful than T2, would you say that this T2.5 is better than Avatar of War?

Weapon and off-hand sets. Avatar of War is an armor set.
