I'm trying to make a quest where the player has to walk into a store and buy some goods. I want him to pick up one of the four items I place there and go to the merchant and pay. It seems like I cannot do that, because if I make quest objective to pick up one of the four, then the player has to pick up all four before he can move on. How can I make him choose one of the four?

In Tired of Being the Hero, you have to choose your weapon. This is done through a dialogue rather than by physically picking up an item. So maybe you could make interacting with the display of goods trigger a dialogue where the player then selects which item they wish to buy, and then direct them to go interact with the shopkeeper.
Also the ravenloft has a select one of several shop items as well. he also uses a dialog to do this. once your dialog tree is ended the item appears and you click on it to proceed.
Another option is to make a non-objective interactable object which "drops" the object and allows the PC to pick it up. The hover text could be something like "Pick up dagger". The merchant will have a dialog that enables certain dialog responses based upon the item(s) in the Players inventory. If the items are not needed beyond the dialog choice, you can make them disappear.
You can make the other objects non-interactable after the first selection if you wish.
