I am pretty sure the intro in one of my 1st, or maybe 2nd, edition D&D books, probably the DMG, had an intro by Gary Gygax that said that all the contents of the books were essentially a guide. The only "canon" that exists is that of your imagination... which was the entire point of D&D!
3rd edition had a good writeup of gelatinous cube mounts in the Arms and Equipment Guide. It included a magic item, the Amulet of Ooze Riding, to avoid being digested.

Are you sure? My understanding is that human applications are generally limited to partial liquid ventilation, that no total liquid ventilation system was in field use, and that deep-sea diving applications would necessarily be total liquid ventilation systems.

Every time I see one of those things jiggling by, I keep thinking "Oh God, help him! He's being eaten by his mount.."
Now, if a genetically modified jello is instead secreting oxygen rich fluids to his victi- uh... rider... then, how do you feed that thing? It can't digest anymore.
Do you come home one day and find a sticky, deflated, curled up translucent corpse, like a fish that jumps out of your aquarium?
The thing is funny as hell, but funnier if you think the rider needs to repair his armor frequently, or suddenly has to jump out and swat it with a rolled up newspaper for snacking on his shield when it shouldn't.

You used to at least see your own weapons floating beside you. I'm not sure why that changed, unless they had to create different cube graphics for every possible weapon appearance, in which case, yowza no wonder they made it generic. But it certainly seemed as though it just grabbed your weapon appearance and plopped it into the cube.
