I'm not immune to acid damage, how can I be inside a Gelatinous Cube?
What's the reasonable explanation for that?

The cube emits an antidote to its rider. In addition, it supplies oxygen too. The gas may be smelly but you have to deal with that.

This particular gelatinous cube has been magically and genetically modified to secrete pulmonary surfactant instead of digestive enzymes. Surfactant is an oxygen-rich lung fluid which supports lung alveolar surface tension, promotes oxygen transfer into pulmonary arteries and raises the blood pO2 level.
Therefore, while floating in these cubes you are essentially breathing oxygen-rich water.
In real life this technology exists. In deep sea diving, breathing gaseous air poses a risk of air embolism due to extreme pressure changes.
Liquids do not expand or contract under pressure. So there are deep-sea diving suits which fill the diver's lungs with liquid surfactant saturated with oxygen. The diver's lungs receive oxygen from the liquid like a fish gill.
This same principle has been applied to your cube.

Abherracies ARE canonical in DandD.
The original Monster manual had many science-altered monstrosities. OwlBears for example.
But you missed the subtle tongue-in-cheek facetious intent of the gelatinous cube mount.
It was meant to be a JOKE.
We all laughed out loud when the cube was released... on APRIL FOOL'S day 1 April 2014!

I am pretty sure the intro in one of my 1st, or maybe 2nd, edition D&D books, probably the DMG, had an intro by Gary Gygax that said that all the contents of the books were essentially a guide. The only "canon" that exists is that of your imagination... which was the entire point of D&D!

3rd edition had a good writeup of gelatinous cube mounts in the Arms and Equipment Guide. It included a magic item, the Amulet of Ooze Riding, to avoid being digested.

Are you sure? My understanding is that human applications are generally limited to partial liquid ventilation, that no total liquid ventilation system was in field use, and that deep-sea diving applications would necessarily be total liquid ventilation systems.

Every time I see one of those things jiggling by, I keep thinking "Oh God, help him! He's being eaten by his mount.."

Now, if a genetically modified jello is instead secreting oxygen rich fluids to his victi- uh... rider... then, how do you feed that thing? It can't digest anymore.

Do you come home one day and find a sticky, deflated, curled up translucent corpse, like a fish that jumps out of your aquarium?

The thing is funny as hell, but funnier if you think the rider needs to repair his armor frequently, or suddenly has to jump out and swat it with a rolled up newspaper for snacking on his shield when it shouldn't.

Gelatinous cubes have also been chemically modified for individual crafting and creation for personal entertainment and even consumption, presumably with sucrulose and dye packs rather then digestive enzymes.

It would be even cooler if once the rider is inside the cube the rider is transformed so you see a skeleton and bits of ragged flesh and clothing etc floating inside

You used to at least see your own weapons floating beside you. I'm not sure why that changed, unless they had to create different cube graphics for every possible weapon appearance, in which case, yowza no wonder they made it generic. But it certainly seemed as though it just grabbed your weapon appearance and plopped it into the cube.
