I am considering getting my first epic mount.
I have 5 or 6 mounts so far that are blue or green. I know from the mounts that I have that I can transfer the blue 80% speed increase to the lower level green mounts. So, if I prefer the look of a green mount, I can use the blue (rare) speed improvement from 50% to 80% just by equipping it.
The purple mount I want to get has a stat of 2000 crit. Does this stat apply if the mount is in the stable, or does it have to be the active mount? I want the 2000 crit stat, but I don't like the look of the Drake - it's just I want it's stat and Protector bonus. Can these transfer to one of my other mounts? It would be really great if I could ride the mount I like the look of with the stats from one of my other mounts.
Likewise, when I eventually get a Legendary mount with a combat power, can this be transferred to another mount?

You can choose to apply each of the three abilities from any of your bound mount's abilities.
Granted, these pics are from the PC but should give you an idea of what I mean:
All your Stable Tab does is allow you to put insignias on your chosen 5 stable mounts. When you have the right combination of insignias, you'll get not only each individual insignia's bonus but also the Insignia Bonus ability granted for making a correct combination.
