How to create an own mob?

I want to make a new spider type, from the scratch, because the ones that exist more resemble crabs.
I want to make a noble person living in his house. A man in an expensive cloths but WITHOUT THA HAT!

So how do I do it?
Here are the problems I’ve encountered:
1. The changes I can make to the existing models are too minor. For example, changing nails size does not allow for making clutches. The changes we can make are TOO SMALL. I can’t make a zombie having clutches – no way with this editor.
2. All the changes are related to the existing model (good) but the sliders represent the existing size of the feature. So sometimes there is no possibility to lengthen something because the slider is on its maximum already.
3. What’s more the existing models do not allow us to delete anything from them. I can’t delete a hat from an NPC (I had to cover it by a hood and make an NPC walking in his own house in a hood:( I can’t delete a cloth from a model I like to use. I can’t delete a leg to make a cripple. Nothing like that.
4. How to make a behavior? We should have a possibility to combine behavior from puzzles – basic behaviors - like we do it for maps. Or even to change the intensity of some behaviors on sliders.

Please give use more flexibility in this area.
I’m inventing pretty nice new adventure and I can’t make a new kind of enemy.
