Would it be plausible to allocate the XP gained in one of our maxed professions to another that we are
leveling?

This would provide both a reward and incentive for maxing it.

You reward/incentive for maxing a profession is the higher level gear you can make. Mixing potions really well does not lend itself to being able to make chainmail, two entirely different skills.
