I am new to IWD and am not as geared as most people. Is that the big key to fighting the "red" mobs? I see level 63 next to the titles as they are taking me down in 2-3 hits. Or do I need PvP gear, which might other help in the PvP areas when I am feeling up to trying those daily/weekly quests. This is happening on different classes and play. I know I am not as good as some players, but having zero chance? Why try?
Don't bite off more than you can chew for starters.
Pull the enemies in the groups they are initially in. Most of the HE's have the enemies grouped into small manageable groups. Don't pull more than the party can handle. Corrupted Bears for example is very easy if you just fight them in their groups of three before moving on, pulling more as needed.
The Motherlode and Beholder can get a little bit out of control, but those are crazy fights regardless, what with Balls of Death floating everywhere and Bear Riders darting here and there, big Giants and one hit AoE's!
Go in with a full compliment of potions, the second you take damage, top off your health. Don't waste your encounters, make them count. Some classes you may have to stick and move, others you can stand and facetank for a bit before needing a break. Still others its all about positioning.
Above all, don't go into panic and flee mode when an enemy locks onto you. Your 1.) not going to outrun it, 2.) it can hit you while moving, 3.) it will out maneuver you and hit you while running sideways, backwards, diagonally, over the hill and through the woods....
Head back towards the main group of players for a chance to have then think someone else is more deserving of their affection.
Also, pay attention to the type of HE it is, and the types of enemies. Some enemies need to be targeted and killed immediately like the Beasthandlers, before they call an ungodly amount of doggies that will decimate even the best of parties. The Deathlock Wights are another type of enemy that need to go as fast as possible as they not only summon some friends to the party, but give immunity to the bad guys too.
Pay attention to what others in the HE are doing too. If you see three or four others looking like they got a system down join in and help.
Keep in mind that even the best geared players will perish sometimes, it happens. Keep your wits about you, play smartly and you'll do just fine.

The key to surviving epic HE's is not starting them until enough people show up to finish them. If you and one other person just run in and start hacking at enemies you'll get stomped. You need more people. PvP gear will not help. These enemies hit like a ton of bricks no matter what you're wearing (although Black Ice gear certainly helps).
If you are having trouble doing the daily/weekly quests, then find someone to do them with in the zone or LFG chat. DC's and GF's in particular don't deal damage very fast so it is wise for them to group up to save time. Icewind Dale is, by design, hard. A lot of people who could just plow through Sharandar and the Dread Ring with no trouble at all are very appreciative of that.
^^ Even an 18k CW/GWF will get flattened in an epic HE if there aren't enough people around to help.
Regarding the PVP daily/weekly in the new zone, you can often finish them without any pvp. If you get killed without a chance, just try the other side of the pvp zone, move from one zone to the other (once you unlock the 2nd zone), or just wait a little bit & then go back.
The pvp zones don't seem to be that populated most of the time (imagine that in a PVE focused game with broken PVP), and a lot of the people doing those quests don't want to pvp, they are just there to finish the quest.
About the only classes I see actively hunting in the open pvp zones are GWFs & TRs. Occasionally you'll see others hunting or a pvp group.

17.5k gwf here, i can and i solo the he`s, yes the big ones. not beholder ofcouse
but there`s no reason to do it anymore, only when bored i do it sometimes
only time is sometimes the case of not being able to complete it ;p
guess that`s the benefit of black ice gear
tried to make a vid, but people keep showing up after i`m busy for a few min ;p
haha, i ll try again but people realy keep coming ;p then i stop and watch them die hehe.
soloing it isn`t realy special with what is it 50% black ice resistence or something.
have the healing weapon and defensive black ice set(with the deflect and temp hp ice stuf in it), just with dps spec.
have also the dps set but as i remember that`s kind of squishy.
otherwise i post a small vid of taking some groups, the end bosses damage isn`t realy much different from that.
edit: tried again, again people come ;p
i try to take the mobs somewhere else so people can`t see i`m doing it.
but mobs can`t be pulled that far.
uploading the vid, it`s not showing supergreat gameplay and big dps, i`m sleepy.
for these kind of packs i don`t need roar, just ibs would be nicer to watch.
but can`t go make and upload loads of vids to show i can do it ;p
as you can see i don`t take damage already.
a little, but not using pots yet even with that ;p
it`s not a great video i know, i`m so sleepy. even forgot to change something, but whatever.
again have to say it`s not a great vid and blablabla not special at all in general that someone can solo it.
the funny part though is the gf that came died at the end hehe.
you see his corpse green while i type
almost done uploading
i`m so sleepy, i don`t even keep hanging around to complete the he`s with others
it`s kind of slow also the vid, because the others interupt and i just should pull 2 packs and use a healing potion maybe ;p
videoquality is bad, never know how to make it upload normal
trying to look for empty he`s, but can`t find one, changed to dps set which should be enough also and use healing pots just like anyone else can.
maybe should use one defense pot with it.
but it`s kind of boring to look for it(empty he) in a game that doesn`t have realy anything much for me anymore.
can also solo kessel, some kind of 3 times as hard mode with a little extra chance on rings, cloaks wouldn`t be that bad for the ones who want it and not being very lucky.
i`m realy not going to do it, record solo epic he`s, because i waste all my time finding one.
especialy on the weekend now.
maybe if you re lucky someday, and i didn`t find another game yet.
went look a couple of times again and just with dps set on works also just well, goes faster but people keep showing up and join when someone already is busy, so a vid is not going to happen.
for me it`s just too boring to keep looking for it and hoping none will join.
tried again, but again 2 people join. finnished it this time luckely because it dropped 2nd mainhand i needed, or needed, could toy around with.
