I am also curious about what happens when you complete a set, a series of set, and other such things. There seem to be points of some sort for each item: but what do they actually do? o.o

It's just fluff. The points don't confer anything...which makes me think "why did they bother with a point value in the first place..." Just an observation.

I have almost completed all the events collections page , there is the boar that I couldn't get for the midsummer festival and the mounts for the winter festival because I bought the companion to save and sell on all my alts/accounts/characters , other than that I think I have everything else in the events tab.
The neverwinter Team have been pretty big on titles and such might be a valuable thing to put a decent title in, or a [Crown of OP collection] transmute / pet clothes
For the moment completing a set only give you some extra points but nothing to do with them. I always thought this was something they would implement in the future with somekind of rewards for completing sets or things to buy with the points. Who knows.
Some titles and fashion items (special outfits or recoverable dyes) as a prize for reaching certain goals (i.e. a title or whatever every 100 collection points) would be really appreciated
