It would be cool if it still dropped some good loot after killing it though .

They're merely irritating, and easy to get out of the way of once you are fighting them. I agree that the trappers are much more of a pain. And the wolves later on.
Heh, someone told me that if you hover over the chests, it shows you if it's a mimic or not, but I never figured out what they see that I don't. All I see is a round reticle with a dot in the middle. That said, obviously, unless I memorize them, they scare the HAMSTER out of me at first. Otherwise, it's always any area where you can't go two feet without something attacking, but that's just more annoying as hell than anything. Seriously, annoying as HELL. The wolves are bad too. Not only do they stun and cause you to have to wait to fight back, but they're friggen EVERYWHERE. Turn around, wolf, finally get unstunned and while fighting, back up... into two more wolves, rinse, repeat.

I just encountered a new enemy that apparently drains you action points completely. This was annoying especially in a boss fight that spawns like 5 of those mobs.
While I will grant you that Mimics can be a tad bit annoying to fight, personally, they always make me laugh. This is in part because they're such an iconic monster and in part because the bouncing, biting chest is just funny to actually observe.

They actually seem to have toned down that mob. On preview, they were draining much more often.

Believe they are called Witherers. They are small, need to take them out early, they are annoying but good to see another enemy type.

Looking for a guild for PvE Dungeons to suit AEST evenings
There are not really any notable types of mobs in this game (not played Feywild), except Mimic if you cannot spot the difference.
Unlike WoW or Rift or even Tera, where it is a seamless open world experience and high or almost infinite mob variety, giving a higher level of immersion, danger and risk choices in gameplay. In NW, there is nothing like having to deal with Monstrous Kaliri or Fel Reaver or Hogger or truly dangerous swarms.
That said, I did enjoy being "annoyed" by the green cloud high damage aoe lizard mages in Pirate's Skyhold, especially when they bugged multiple times at end of the zone's skirmishes making it all but impossible to loot the final chest after a long and hectic fight because they kept everyone in combat while remaining untargettable under the ground!
I love the mimics. I just wish my computer didn't lag into oblivion whenever I trip one in a dungeon/skirmish. Too many effects from party/mobs/mimic for it to keep up.
The only few times i had a mimic was while playing a quest alone (no pet) as CW in low level and i had a hard time, maybe because i was still new to the game. Still, i dont like them much. Thanks for the tip about how to spot them. I think i might still try to fight them. Now, if only ennemies would let us run from them...

Ice Wolves that stupid ice breath attack they do..so annoying or Golems or Hulks, I could keep going on
The most annoying mob in the game is the forum troll. There are few known attacks that can defeat them. And they have a habit of coming back even when trounced.
