I want to allow the player to choose one of three quest items during a dialogue with a npc. Once selected, the item will control the conversation choices with later npc(s). It seems that objective completion, object interaction etc. only has one item drop slot. How do I make it so the correct item shows up in the player's inventory?

As it stands, you cannot do that. You can only pick which item appears next to the NPC or nearby... and tell the PC that he or she must pick it up.
So you would have a choice of "Do you wish to take an orb, a fork, or a rock?" If the person picks orb, you have the orb programmed to "appear when" the dialogue "The orb it is, then" is reached. (you can't pick responses, so it has to happen on the next dialogue point from the NPC). So it looks like this:

The orb [not chosen: the rock, the fork]
The orb it is ->>> spawns orb item that you made to drop the orb when interacted with

The rock [not chosen, the orb, the fork]
The rock it is - >>>> spawns rock item that you made to drop the rock when interacted with
So if you make it appear when dialogue prompt is chosen, then they can only spawn one of the 3 items cause they can only pick 1 of three choices.
