"Boss like" encounters

I apologize if this has been asked before, but I was wondering if anyone has made a list of single “boss like” encounters?

Any suggestions?

I would do a giant fish in a sewer encounter. Doesn't have to be a boss, just like a boss.

I might....might do a Succubus in a sewer encounter, but definitely not a giant fish
